Number Of Ingredients 16

1/2 cup sugar
1/2 cup plus 2 tablespoons water, divided
1/2 cup fresh or frozen pitted dark sweet cherries, thawed and finely chopped
1 tablespoon cornstarch
WAFFLES:
1-1/4 cups all-purpose flour
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon baking soda
1-1/2 cups buttermilk
2 large eggs, room temperature
1/3 cup canola oil
1/2 teaspoon almond extract
1-1/2 cups fresh or frozen pitted dark sweet cherries, thawed and chopped
1/2 cup miniature semisweet chocolate chips
Additional miniature semisweet chocolate chips, optional

Steps:

  • Preheat waffle maker. In a small saucepan, cook and stir sugar and 1/2 cup water over medium heat until sugar is dissolved. Add cherries; cook and stir until cherries are tender, 3-5 minutes. Mix cornstarch and remaining 2 tablespoons water until smooth; stir into pan. Bring to a boil; cook and stir until thickened, 1-2 minutes. Remove and keep warm., In a large bowl, whisk flour, baking powder, cinnamon and baking soda. In another bowl, whisk buttermilk, eggs, oil and extract until blended. Add to dry ingredients; stir just until moistened. Stir in cherries and chocolate chips. Bake waffles according to manufacturer's directions until golden brown. Serve with syrup and, if desired, additional chocolate chips., Freeze option: Cool waffles on wire racks. Freeze between layers of waxed paper in an airtight container. Freeze cherry syrup in a freezer container. To use, partially thaw cherry syrup in refrigerator overnight. Heat through in a saucepan, stirring occasionally. Reheat waffles in a toaster on medium setting. Or, microwave each waffle on high until heated through, 30-60 seconds.

3 cups water
1 vanilla bean
3/4 cup sugar
1 lemon, zest of, pared (no white pith)
1 tablespoon strained fresh lemon juice
1 1/4 lbs cherries, pitted

Steps:

  • Combine the water, sugar, vanilla bean, and lemon zest in a medium saucepan.
  • Place over low heat and stir until sugar dissolves.
  • Raise the heat to high and bring the syrup to a boil.
  • Stir in the fruit and the lemon juice.
  • Cover the fruit with a lid slightly smaller than the diameter of the saucepan.
  • This will keep the fruit submerged in the syrup.
  • Reduce the heat to low and cook about 8 minutes.
  • Allow the fruit to cool in the syrup, still covered, to room temperature.
  • Transfer to a serving bowl, cover and chill at least 30 minutes before serving.
  • To serve:.
  • May be served as is, garnished with whipped cream.
  • Or use as a garnish for cakes, filling for crepes or as an ice cream topping.

2 pounds red or yellow fresh cherries, pitted, stems removed
1/4 to 1/2 cup sugar
1 tablespoon kirsch, (optional)
2 tablespoon freshly squeezed lemon juice
Grated zest of 1 lemon (optional)

Steps:

  • Place cherries, sugar, kirsch (if using), lemon juice, and zest (if using) in a medium saucepan over medium-low heat and bring to a simmer; cook, stirring occasionally, until cherries are tender, about 15 minutes. Use a slotted spoon to transfer cherries to a bowl.
  • Continue cooking remaining mixture in pan over medium heat until slightly thickened, about 3 minutes. Pour over cherries; let cool. Store in an airtight container in refrigerator for up to 1 day.

1/2 cup caster sugar
1/2 cup water
1 (300 g) packet frozen cherries, thawed on paper toweling
1 sprig of fresh mint
2 tablespoons ouzo
2 (180 g) packets round waffles
vanilla ice cream, to serve

Steps:

  • Place the sugar and water in a medium saucepan over a low heat and, stirring, cook for 3-4 minutes or until the sugar dissolves; increase the heat to high and bring to the boil; add the cherries, mint and ouzo; reduce the heat and simmer, stirring occasionally, for 5-6 minutes or until the syrup thickens slightly; remove the mint sprig and discard.
  • Warm the waffles in a toaster, divide the waffles among serving plates, top with ice cream and spoon over the cherries and syrup and serve immediately.
