- Preheat oven to 425 degrees. Add half the oil to the pan and place in the oven.
- While pan heats up, cut potatoes. Once preheated, add to the sheet pan. Be careful as the pan and oil will be HOT!
- Salt the potatoes and place in the oven. Do not stir.
- Cook for 20 minutes. At the 20 minute mark, carefully flip potatoes using a metal spatula. Make sure you do not rip off the crispy skin. Return to the oven and cook an addition 10 minutes.
- While fries cook, add the remaining oil to a small sauce pan. Add garlic and cook 1 minute, or until fragrant. Set aside until potatoes are done.
- When fries are done, add to a big serving bowl. Drizzle with garlic oil and then top with herbs and parmesan cheese. Serve immediately.
