Categories     side-dish

Time 1h10m

Yield 2 1/2 quarts

Number Of Ingredients 12

1/2 cup balsamic vinegar
2 tablespoons Dijon mustard
1 tablespoon honey
Kosher salt and cracked black pepper
3/4 cup canola oil
5 pounds roma tomatoes, quartered
1 tablespoon dried basil
1 tablespoon kosher salt
1 teaspoon dried garlic powder
1 teaspoon onion powder
1 teaspoon cracked black pepper
1/2 teaspoon dried Italian seasoning

Steps:

  • For the balsamic vinaigrette: Combine the vinegar, mustard, honey and salt and pepper to taste. Stir with a whisk or fork, then drizzle in oil, whisking constantly, until combined.
  • For the roasted tomatoes: Preheat the oven to 400 degrees F. Line a sheet pan with foil and spread out the tomatoes evenly to ensure a proper roast on each. Sprinkle the dried basil, salt, garlic powder, onion powder, pepper and Italian seasoning over the tomatoes, making certain that each tomato is well seasoned. Drizzle 1/4 cup vinaigrette over the tomatoes, making sure not to over-coat the tomatoes.
  • Roast the tomatoes 45 minutes. (This is a fast roast, not an oven-dried tomato. Do not flip or shake the pan. The tomatoes will caramelize slightly on the top and the bottoms will remain juicy.) Turn the oven off and let sit in the oven 15 additional minutes.

ROASTED POTATOES WITH TOMATOES, BASIL, AND GARLIC

Roasted Potatoes with Tomatoes, Basil, and Garlic image

Simple and light. The roasted tomato gives a light and tangy flavor which balances with the starchiness of the potatoes. Use a red or yellow potato for best flavor. Garlic, fresh basil, and a hint of rosemary add to the aroma. My girlfriend loves this as a side with chicken or pork.

6 slices firm white sandwich bread
1/4 lb sliced bacon (about 5 slices)
6 tablespoons olive oil
1/4 cup finely chopped shallot
3 tablespoons Sherry vinegar
4 assorted medium heirloom tomatoes (2 lb total), cut into 1/4- to 1/3-inch-thick slices

Sprinkle cheese and remaining basil and bacon over and around tomatoes. Spoon some of warm bacon dressing over and around tomatoes and season with salt and pepper.

OVEN ROASTED TOMATOES WITH GARLIC AND ANCHOVIES

Oven Roasted Tomatoes With Garlic and Anchovies image

This is a wonderful flavorful easy side dish to serve to guests for a dinner party. You can use any amount of garlic desired, since my family is garlic-lovers I have even gone so far as to use a whole bulb (about 10-12 cloves). Make certain to use only firm plum tomatoes only for this, regular tomatoes will not work and will become watery. If you find that your tomatoes are very juicy, I would suggest to remove just a small amount of the pulp and seeds from the inside with a small spoon from the tomatoes before roasting, although it is really not necessary.

Number Of Ingredients 7

2 lbs firm ripe large plum tomatoes

BAKED TOMATOES FILLED WITH EGG, BACON, AND SCALLIONS

Baked Tomatoes Filled with Egg, Bacon, and Scallions image

Categories     Egg     Tomato     Appetizer     Quick & Easy     Bacon     Gourmet     Wheat/Gluten-Free     Peanut Free     Tree Nut Free     Soy Free     No Sugar Added

Yield Serves 2

Number Of Ingredients 8

2 large tomatoes (about 1 1/2 pounds), a 1/2-inch slice cut from the stem end of each and is carded and the pulp scooped out
4 slices of lean bacon
1 teaspoon unsalted butter, melted
3 large eggs, beaten lightly
1/4 teaspoon Dijon-style mustard
2 scallions, sliced thin
1 tablespoon finely shredded fresh basil leaves plus basil sprigs for garnish
thin 2-inch strips of Monterey Jack

Steps:

  • Arrange the tomatoes, cut sides down, on a rack to drain. On a microwave-safe plate lined with several layers of paper towel microwave the bacon at high power (100%) for 2 to 3 minutes, or until it is browned. Transfer the bacon to another paper towel to drain and when it is crisp crumble it coarse. Sprinkle the inside of the tomatoes with salt and pepper to taste, arrange them, cut sides up, in a microwave-safe shallow baking dish, and microwave them at medium power (50%) for 30 seconds to 1 minute, or until they are softened. (Do not overcook the tomatoes or they will collapse.)
  • In a shallow microwave-safe bowl melt the butter at high power (100%), whisk in the eggs, the mustard, the scallions, and salt and pepper to taste, and microwave the mixture at high power (100%), stirring every 30 seconds, for 1 1/2 minutes, or until the eggs are in large chunks and almost set. Stir the mixture briskly to break up the chunks and stir in the bacon and the shredded basil. Divide the egg mixture between the tomatoes, top it with the Monterey Jack strips, forming Xs, and microwave the filled tomatoes at high power (100%) for 15 seconds, or until the cheese is melted.

Tips for Making the Best Oven-Roasted Tomatoes:

  • Choose ripe, flavorful tomatoes. Roma tomatoes are a good option because they are meaty and have fewer seeds.
  • Cut the tomatoes into even-sized pieces so that they cook evenly.
  • Toss the tomatoes with olive oil, salt, pepper, and herbs before roasting. This will help them to caramelize and develop a delicious flavor.
  • Roast the tomatoes at a high temperature (400 degrees Fahrenheit) for 20-30 minutes, or until they are slightly charred and softened.
  • Let the tomatoes cool slightly before serving. They can be served as a side dish, appetizer, or added to salads, sandwiches, and pasta dishes.

Conclusion:

Oven-roasted tomatoes are a versatile and delicious dish that can be enjoyed in many different ways. They are a great way to use up fresh tomatoes, and they can also be made ahead of time and stored in the refrigerator for later use. Whether you are serving them as a side dish, appetizer, or ingredient in another dish, oven-roasted tomatoes are sure to please everyone at the table.
