CITRUS-BASIL VINAIGRETTE
This dressing is lovely yellow color, and we use it on a mixed green salad (mixed Romaine and European greens), tossed with small broccoli and cauliflower florets, raisins or sweetened dried cranberries, and shredded Cheddar or crumbled Gorgonzola cheese. The sweet-tart zestiness of the dressing perks up the salad! The yield depends on how much salad dressing you prefer. For us, this recipe makes enough dressing for about 4 large salads.

Tips:
- Choose ripe papaya: For the best flavor and texture, use ripe papaya that has a deep orange color and yields to gentle pressure.
- Use fresh citrus juice: Freshly squeezed orange, grapefruit, and lime juice will give your vinaigrette the best flavor. If you don't have fresh citrus, you can use bottled juice, but it won't be as flavorful.
- Adjust the sweetness: If you find the vinaigrette is too tart, add a little honey or maple syrup to taste. You can also add a pinch of salt to balance out the flavors.
- Use a variety of herbs: Feel free to experiment with different herbs in your vinaigrette. Some good options include cilantro, basil, and mint.
- Make a big batch: This vinaigrette will keep in the refrigerator for up to 2 weeks. So, feel free to make a big batch and use it on salads, grilled vegetables, or even fish and chicken.
Conclusion:
This papaya citrus vinaigrette is a healthy and flavorful dressing that is perfect for salads, grilled vegetables, and even fish and chicken. It's easy to make and can be tailored to your own taste preferences. So, next time you're looking for a delicious and healthy dressing, give this papaya citrus vinaigrette a try!
