3/4 cup raspberries
2 tablespoons light brown sugar
4 1/2 tablespoons plus 1/2 teaspoon granulated sugar
2 teaspoons cornstarch
1/8 teaspoon cinnamon
3/4 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
Pinch of kosher salt
2 tablespoons chilled unsalted butter, cut into pieces
2 1/2 tablespoons plain nonfat yogurt
2 tablespoons skim milk
1/4 teaspoon pure vanilla extract

Steps:

  • Preheat the oven to 400 degrees.
  • In a 9-inch pie pan, stir together the fruit, brown sugar, 2 tablespoons granulated sugar, the cornstarch, and cinnamon.

1 orange, zested
1 1/4 cups granulated sugar
1 cup light brown sugar, packed

1/4 teaspoon salt
1 cup quick-cooking oatmeal
1/2 pound cold unsalted butter, diced

  • Preheat the oven to 350 degrees F. Butter the inside of a 10 by 15 by 2 1/2-inch oval baking dish.
  • Immerse the peaches in boiling water for 30 seconds, then place them in cold water. Peel the peaches and slice them into thick wedges and place them into a large bowl.
