I've been making this for years and my husband loves these chops, and it's one way to get him to eat fruit, lol. Very saucy and tender, these chops go well with rice or baked potatoes.

1/4 c light brown sugar
1/2 tsp cinnamon
1/4 tsp cloves
1 8 oz can tomato sauce
1 29 oz can cling peach halves, 1/4 cup syrup reserved
1/4 c vinegar, i used cider vinegar
salt & pepper to taste

Tips:

  • To ensure the pork chops are cooked evenly, use a meat thermometer to check the internal temperature. It should reach 145 degrees Fahrenheit for medium-rare, 155 degrees Fahrenheit for medium, or 165 degrees Fahrenheit for well-done.
  • If you don't have a meat thermometer, you can check the doneness of the pork chops by cutting into one. The meat should be slightly pink in the center for medium-rare, or cooked through with no pink for well-done.
  • To add a crispy crust to the pork chops, sear them in a hot skillet before baking. This will also help to lock in the juices.
  • Feel free to experiment with different seasonings and herbs to create your own unique flavor combinations.
  • If you don't have peaches, you can substitute other fruits, such as apples, pears, or plums.
  • Serve the pork chops with your favorite sides, such as mashed potatoes, roasted vegetables, or a simple salad.
