1 tablespoon cornstarch
1 egg yolk beaten with 2 teaspoons milk (for glaze)

  • For crust:
  • Blend flour, salt and sugar in processor. Add butter; using on/off turns, process until butter is cut into 1/4-inch pieces. Add 6 tablespoons ice water. Using on/off turns, blend until dough comes together, adding more water by tablespoonfuls if dough is dry. Gather into ball; divide into 2 pieces. Flatten pieces into disks; wrap in plastic. MUM'S RAISIN PIE

Mum's Raisin Pie image

My Mum baked all the time :) Her pies were to die for. I always liked her raisin pie the best! Mum made her own pastry. She always used the recipe on the Tenderflake Lard and it turned out flakey and absolutely scrumptious every time. I'm not that ambitious and find the frozen Tenderflake pie crusts to be the closest to her...

Provided by Sue Fitzpatrick

Categories     Pies

Time 30m

Number Of Ingredients 9

2 c sun-maid raisins
2 c water
1/2 c brown sugar, firmly packed
2 Tbsp cornstarch
1 tsp cinnamon
1/4` tsp salt
1 Tbsp vinegar
1 Tbsp butter
pastry for double pie crust, unbaked

Steps:

  • 1. Pre-heat oven to 425F. Combine raisins and water in a saucepan and boil for 5 minutes. Stir occasionally so it doesn't stick to bottom of pot.
  • 2. Blend sugar, cornstarch, cinnamon and salt. Reduce heat a little and add to raisin liquid and cook, stirring until clear. Remove from heat.
  • 3. Stir in vinegar and butter. Cool slightly.
  • 4. Turn into pastry-lined pan. Cover with top pastry (pierce top in several places) or use lattice strips of pastry. Bake at 425°F. about 30 minutes or until crust is golden brown. Let cool.

Tips:

  • Prep your ingredients in advance. This will help you stay organized and ensure that you have everything you need before you start assembling your pie.
  • Use a sharp knife to cut your pears. This will help you get clean, even slices.
  • Don't overcrowd your pie pan. Leave some space between the pears and raisins so that they can cook evenly.
  • Bake your pie at a high temperature for the first 15 minutes. This will help to create a golden brown crust.
  • Reduce the temperature to 350 degrees Fahrenheit for the remaining baking time. This will help to prevent the crust from overcooking.
  • Let your pie cool for at least 1 hour before serving. This will allow the filling to set and the flavors to develop.

Conclusion:

This pear and raisin mince pie is a delicious and festive dessert that is perfect for any occasion. The sweet and tangy filling is complemented perfectly by the flaky crust. With its beautiful lattice top, this pie is sure to impress your friends and family. So gather your ingredients and give this recipe a try today!
