SPINACH, PEAR AND SHAVED PARMESAN SALAD

Spinach, Pear and Shaved Parmesan Salad image

This comes from the Dec. 2009 issue of BH&G. I have not made it yet, but it sounds like it would be a nice Winter Salad. They suggest that you have the cheese at room temperature and use a vegetable peeler to shave it. Then, cover in plastic wrap until ready to use.

SPINACH-PEAR SALAD

Spinach-Pear Salad image

I love spinach, and have developed quite a fondness for pears lately. This salad was posted by Bonnie Lloyd in the cookbook "June Fete Fare". Cooking time is the time it takes to toast the pecan halves.

Provided by breezermom

Categories     Spinach

Time 20m

Yield 8 serving(s)

Number Of Ingredients 13

1/2 cup olive oil
1/4 small onion
2 tablespoons parmesan cheese, grated
2 tablespoons cider vinegar
1/2-1 teaspoon salt
1/4 teaspoon sugar
1/4 teaspoon dry mustard
1/4 teaspoon dried basil
1/8 teaspoon pepper
1 (10 ounce) package fresh spinach
2 pears, peeled and thinly sliced
1/4 cup golden raisin
1/4 cup pecan halves, toasted

Steps:

  • Mix the first 10 ingredients together, preferably with a food processor or blender so that it mixes well. Set the dressing aside.
  • Remove and discard the stems from the spinach leaves. Wash spinach, and pat dry with paper towels. Combine the spinach, pears, raisins, and pecans in a large bowl. Pour reserved dressing over salad, and toss gently. Serve immediately.

Tips:

  • To ensure the freshest and most flavorful salad, use ripe and in-season pears. Look for pears that are slightly firm to the touch, with no bruises or blemishes. Avoid pears that are too soft or have brown spots.
  • Spinach is a delicate green that can easily wilt, so it's important to handle it gently. Rinse the spinach thoroughly in cold water and pat it dry with a salad spinner or paper towels before adding it to the salad.
  • Parmesan vinaigrette is a classic dressing that pairs perfectly with the sweet pears and peppery spinach. To make the vinaigrette, whisk together olive oil, balsamic vinegar, Dijon mustard, grated Parmesan cheese, salt, and pepper. Taste and adjust seasonings as desired.
  • For a more flavorful salad, try roasting the pears before adding them to the salad. To roast the pears, preheat oven to 425°F (220°C). Toss pear slices with olive oil, salt, and pepper. Roast for 15-20 minutes, or until the pears are tender and slightly caramelized.
  • Feel free to add other ingredients to the salad, such as crumbled bacon, toasted walnuts, or goat cheese. To make a more substantial salad, add grilled chicken or shrimp.

Conclusion:

Pear and spinach salad with Parmesan vinaigrette is a delicious and refreshing salad that is perfect for any occasion. The sweet pears, peppery spinach, and tangy Parmesan vinaigrette combine to create a salad that is both flavorful and nutritious. With a few simple tips, you can easily make this salad at home and enjoy it as a light lunch or dinner.
