0.75 cup granulated sugar
0.25 cup all-purpose flour
0.5 teaspoon ground nutmeg
0.5 teaspoon ground cinnamon
Dash salt
3 cup thinly sliced, peeled tart apples
3 cup thinly sliced peeled pears
2 tablespoon butter, cut up
0.25 cup butter
0.5 cup packed brown sugar
2 tablespoon milk, half-and-half, or light cream
0.5 cup chopped pecans
2.25 cup all-purpose flour
0.25 cup ground, toasted pecans or almonds
1 teaspoon salt
0.5 cup shortening
0.25 cup butter
8 tablespoon cold water

Steps:

  • Preheat oven to 375 degrees F. Prepare and roll out Nut Pastry. Line a 9-inch pie plate with a pastry circle.
  • In a large bowl stir together granulated sugar, flour, nutmeg, cinnamon, and salt. Add apple and pears; gently toss until coated. Transfer apple mixture to the pastry-lined pie plate. Dot with 2 tablespoons butter. Trim bottom pastry to edge of pie plate. Cut slits in remaining pastry circle; place on filling and seal. Crimp edge as desired.
  • To prevent overbrowning, cover edge of pie with foil. Place a foil-lined baking sheet on the rack below the pie in oven. Bake pie in the preheated oven for 50 minutes. Remove foil. Bake for 30 to 40 minutes more until filling is bubbly. Transfer to a wire rack.
  • In a small saucepan melt the 1/4 cup butter over medium heat. Gradually stir in brown sugar and milk. Cook and stir until mixture comes to a boil. Carefully spoon over baked pie; sprinkle with pecans. Return pie to oven; bake for 2 to 3 minutes or until topping starts to bubble. Cool on wire rack. Makes 8 slices. Nut Pastry
  • In bowl combine flour; ground, toasted pecans or almonds; and salt. Cut in shortening and butter until pieces are pea-size. Sprinkle 1 tablespoon cold water over part of mixture; toss with fork. Push moistened dough to side. Using a total of 8 to 12 tablespoons, repeat until all the dough is moistened. Divide in half; form each into a ball. On lightly floured surface, flatten 1 dough ball. Roll into a 13-inch circle. Repeat with remaining ball of dough.

¾ cup granulated sugar ((150 grams))
¼ cup all-purpose flour ((30 grams))
½ teaspoon ground cinnamon
¼ teaspoon ground nutmeg
½ teaspoon salt
4 cups apples (, peeled, cored, and sliced thin (380 grams))
4 cups pears (, peeled, cored, and sliced thin (513 grams))
2 tablespoons unsalted butter (, cubed (28 grams))
¼ cup unsalted butter ((56 grams))
½ cup packed light or dark brown sugar ((55 grams))
2 tablespoons heavy cream
¼ cup chopped pecans ((25 grams))

Steps:

  • Preheat oven to 375°F. Line a sheet pan with parchment paper.
  • On a lightly floured surface, roll one pie crust out into a 13-inch circle. Transfer to a 9-inch baking dish. Roll out the second pie crust.

1/3 cup plus 1/2 cup sugar
3 tablespoons water
2 ripe but firm Bosc or D'Anjou pears
4 tablespoons unsalted butter, softened
1 egg
2/3 cup flour
1/2 teaspoon baking powder
1/2 teaspoon almond extract

Steps:

  • Preheat oven to 350 degrees. Butter an eight-inch round cake pan but do not use one with a removable bottom.
  • Toast the almonds until lightly browned under the broiler, in a toaster oven or in a heavy ungreased skillet on the top of the stove. Set aside.
  • Swirl one-third cup of the sugar with the water in a heavy saucepan or skillet until the sugar dissolves. Place over medium heat and cook, stirring occasionally, until the mixture turns a uniform honey-brown color. Pour the caramel into the cake pan, tilting it so the caramel coats the bottom. Immediately scatter the almonds over the caramel.
  • Peel and core the pears. Cut them into thin, uniform slices and arrange the slices, overlapping, in a pattern on top of the caramel and almonds.
  • Cream the butter with one-half cup of sugar. Beat in the egg. Sift the flour and baking powder together and stir into the batter. Add the almond extract.
  • Spread the batter over the pears in the cakepan. There will be a thin layer of batter. A spatula moistened in cold water will make spreading it easier.
  • Place in preheated oven and bake for 30 minutes. Remove from oven, allow to cool for a minute or two, run a knife around the edge, then unmold onto a serving dish. If any of the topping clings to the pan, lift it off and replace it on the cake. Serve the cake while still warm with whipped cream.

1 (14 ounce) can sweetened condensed milk
1 9" unbaked pie shell
3 eggs, slightly beaten
1 cup light corn syrup
1 cup sugar
2 tablespoons margarine or 2 tablespoons butter, melted
1 1/2 cups pecans, finely chopped
1 teaspoon vanilla
1/8 teaspoon salt
pecan halves (optional)

Steps:

  • Fill a large heavy duty pot with water and bring water to a boil.
  • Remove paper label from condensed milk can.
  • Immerse the unopened condensed milk can into the boiling water.
  • Reduce heat to medium and cover pot with lid.
  • Cook for 3 hours.
  • Occasionally check pot to make sure it doesn't boil dry.
  • Remove can from water with tongs.
  • Place in freezer for one hour, to cool.
  • Combine slightly beaten eggs with syrup, sugar, margarine, vanilla and salt.
  • Mix well.
  • Add chopped pecans and mix well, again.
  • Pour pecan pie mixture into unbaked pie shell.
  • Bake@ 350 degrees for 50-55 minutes.
  • Filling is done when knife inserted near the center comes out clean.
  • When done, remove pie from oven and let cool for 1 hour.
  • Open cooled condensed milk can.
  • Empty contents into small bowl and stir well.
  • Pour the carmelized milk onto the top of the pecan pie and spread over the pie.
  • Garnish with pecan halves (optional).
  • Serve with whipped topping (optional).
  • (note) if salted pecans are used, omit the 1/8 tsp.

1 egg white, lightly beaten
1/4 cup butter
1 cup firmly packed brown sugar
3/4 cup flour
1 teaspoon baking powder
1 large egg
1 teaspoon vanilla
1 cup chopped pecans
2 cups whipped cream (or cool-whip)
1 vanilla cookie pie crust

Steps:

  • Preheat the oven to 350.
  • Brush the pie crust with the egg white.
  • Put the pecans on a cookie sheet with sides.
  • Put the crust and the pecans in the oven and bake for 5 minutes.
  • (Or you can toast the pecans separately. I just found it faster to do it this way.) Melt the butter.
  • Using a mixer on medium blend the melted butter, the brown sugar, the flour and the baking powder until well mixed.
  • Add the egg and vanilla and mix well.
  • Stir in 3/4 cup of the pecans.
  • This will be very thick.
  • Put it into the prepared crust.
  • Sprinkle with the remaining 1/4 cup pecans.
  • Bake at 350 for 30-35 minutes or until the filling is set in the center.
  • Cool it completely.
  • Put the whipped cream on top as garnish.
  • Store in the refrigerator until you are ready to serve it.
