Time 40m

Yield 1 quart 8 ounces

Number Of Ingredients 6

2 1/2 pounds prickly pears
1/2 cup water
1 cup sugar
1 bunch fresh mint
1 cinnamon stick
1 vanilla bean, split lengthwise

Steps:

  • With the tip of a sharp knife, scrape off the thorns of the prickly pears. Cut off the ends of the fruit and then make a lengthwise slit through the skin and peel off and discard the skin. Repeat with the remaining fruit. Cut the fruit into large pieces, transfer to a food processor and process until pureed. Strain through a fine sieve. There should be approximately 2 cups of liquid.
  • In a saucepan, combine the prickly pear puree, water, sugar, mint, and the cinnamon stick. Be sure to scrape the seeds from the vanilla, and then put both the seeds and the pod into the pan. Bring the mixture to a boil over medium heat stirring to dissolve the sugar. Reduce the heat to a simmer and cook uncovered for about 20 minutes.
  • Taste to make sure that the flavors are balanced. Strain through a fine mesh sieve. Use the syrup to ladle over fresh fruits.

PRICKLY PEAR SYRUP

I got this from The Prickly Pear Cookbook by Carolyn Niethammer. I can't wait to try it with this year's crop of prickly pears!

Time 20m

Yield 1 pint, 6 serving(s)

Number Of Ingredients 4

12 medium prickly pears
1 lemon, juiced
1 1/2 cups sugar
1 teaspoon cornstarch (optional)

Steps:

  • Put prickly pears in a bowl or dishpan full of water. Holding each one with tongs, scrub with a vegetable brush to remove dust and some of the stickers (the rest will come out later when you strain the juice).
  • Transfer 5 at a time to a blender jar and process until liquid. Line a mesh strainer with cheesecloth and strain juice into a medium saucepan. You should have about 1 cup.
  • Add lemon juice and sugar, and slowly bring to a simmer. Cook until syrup begins to thicken. If you want a thicker syrup, stir in 1 teaspoon of cornstarch dissolved in a little cold water and cook to thicken.
  • Stir with wire whisk if necessary to smooth consistency.
  • For diabetics: Use an amount of your favorite non-nutritive sweetener equivalent to 1 1/2 cups of sugar. Since sugar causes thickening, you'll have to compensate by using a little more cornstarch, or use another thickener such as guar gum or xanthan gum.

PEAR CORNMEAL CAKE W/ROSEMARY SYRUP

Pear Cornmeal Cake w/Rosemary Syrup image

I found this in Real Simple. I love pears and any EASY fast recipe.

Provided by Marie Everson

Categories     Sweet Breads

Time 1h5m

Number Of Ingredients 11

8 Tbsp (1 stick) unsalted butter, melted plus more for pan
1 1/4 c flour, spooned and leveled
1/2 c yellow cornmeal
2 tsp baking powder
1/4 tsp baking soda
1/2 tsp fine salt
1 1/4 c sugar
1/2 c buttermilk
2 eggs whisked
2 ripe pears, cut into 8 wedges each
6 large sprigs rosemary

Steps:

  • 1. Heat oven to 350. Butter a 9 in. springform pan
  • 2. Whisk together the flour, cornmeal, baking powder, baking soda, salt and 1 cup of the sugar in a large bowl. Whisk together the buttermilk, eggs and melted butter in a medium bowl. Add the wet ingredients to the dry ingredients and whisk to combine. Fold in the pears.
  • 3. Transfer the batter to the prepared pan. ?Bake until a toothpick inserted in the ceanter comes out clean, 45-55 minutes. Cool in the pan for 15 min.; transfer to a wire rack.
  • 4. Meanwhile, heat the rosemary, the remaining 1/3 c. sugar, and 1/4 c. water in a sm. pot over medium heat. Cook, stirring, until the sugar is melted. Remove from heat, cover, and let sit, stirring occasionally for 30 min. and up to 4 hrs. Discard the rosemary sprigs.
  • 5. While the cake is still warm, brush the top and side with the rosemary syrup.
  • 6. Serve warm or at room temperature with whipped cream, if desired.
  • 7. TIP: Springform pans are slightly deeper than cake pans, giving this cake a heft that's worthy of a holiday meal. If you don't have a springform pan, butter and flour a 9 inch round cake pan and bake on a baking sheet (to catch any overflow).

Tips:

  • Choose ripe and firm pears: The best pears for syrup are ripe but still firm. Avoid pears that are too soft or have bruises or blemishes.
  • Peel and core the pears carefully: Use a sharp knife to peel and core the pears. Be careful not to cut too deeply into the flesh of the pears.
  • Use a variety of spices: You can use a variety of spices to flavor your pear syrup. Some common spices include cinnamon, cloves, nutmeg, and ginger.
  • Simmer the pears gently: Simmer the pears gently in the syrup until they are tender but still hold their shape.
  • Let the syrup cool completely: Allow the syrup to cool completely before using it.

Conclusion:

Pear syrup is a delicious and versatile condiment that can be used in a variety of ways. It can be drizzled over pancakes, waffles, or French toast. It can also be used as a glaze for roasted chicken or pork. And it can even be used to make cocktails. So next time you have some ripe pears, be sure to make a batch of pear syrup. You won't be disappointed!
