It is the dish I am most often asked to bring to a gathering requiring finger foods or appetizers. Really good on Townhouse Wheat Crackers. If I don't have any orange juice concentrate, I use just enough fresh squeezed juice to make it the right consistency and the zest from the orange for more flavor. *PLEASE NOTE!!* You REALLY need to make this ahead of time! The flavors must blend for it to taste good!

2 tablespoons blue cheese

  • Place nuts in food processor and process until finely chopped; it takes about 10 seconds.

  • Process until very smooth; again, it should only take about 10 seconds.
  • Pack into a bowl and refrigerate until serving; this is best if allowed to chill for a few hours.

2 tablespoons butter
1 package (8 ounces) cream cheese, softened
2 teaspoons whole milk
1/2 cup sour cream

1 small onion, grated
1/4 cup chopped green pepper

  • In a small skillet, saute pecans in butter until toasted; set aside. In a small bowl, beat cream cheese and milk until smooth. Add the sour cream, garlic powder and pepper; mix well. 4 bacon slices
3/4 cup pecan pieces
2 cups firmly packed grated cheddar
4 ounces cream cheese, room temperature
2 tablespoons mayonnaise
1/8 teaspoon hot pepper sauce (such as Tabasco)
1/8 teaspoon Worcestershire sauce
3 green onions, sliced

Steps:

  • Fry bacon in heavy large skillet over medium heat until crisp. Transfer to paper towel to cool. Add pecans to drippings and cook until golden brown, stirring occasionally, about 5 minutes. Transfer to paper towel to cool. Season with salt.
  • Blend cheddar, cream cheese, mayonnaise, hot pepper sauce and Worcestershire sauce in processor until smooth. Transfer to bowl and stir in green onions. Crumble bacon and add to mixture. Line cookie sheet with plastic, forming 8-inch strip. Freeze 20 minutes to firm slightly. Using plastic as aid, form log shape. Remove plastic; roll log in pecans to coat. Wrap and refrigerate until firm. (Can be prepared 1 week ahead.) Serve with crackers.

Though the recipe indicates putting the pecan pieces on top, I just mix them into the spread. I have also altered this to include 1/3 cup diced green olives 8 ounces deviled ham, and 1/4 cup diced red bell pepper. (This is really mixing another recipe (Snowcap Spread with the Pecan Spread)

2 1/2 oz dried beef, shredded
1/4 tsp pepper
1/4 c green pepper, finely chopped

1/2 c sour cream
1/2 c chopped pecans
2 Tbsp butter

Steps:

  • 1. Combine cheese and milk, mix well. Stir in beef, pepper, onion, and seasonings. Mix well and fold in sour cream. Spread in 8" pie plate. Heat pecans in butter, 2 T or so, and 1/2 t salt. Sprinkle over cheese. Bake at 350 degrees 20 min. Serve with crackers, sliced white bread, trimmed of crust and quartered, toasted crisp would also be good with this.

8 oz pkg (reg or whipped) cream cheese
toasted pecans (untoasted is fine also)
(use equal amounts of olives & nuts, about a half cup each ... just eyeball it.)
