After making 3 different types of persimmon cookies today, these were clearly the favorites. Katherine Hakins Armstrong won the Indianapolis Star's 2005 Holiday Cookie Contest with this recipe. I used a mixture of chopped dates, dried apricots, and raisins, as I did not have enough raisins to make 1 cup. You may want to reduce the oven temperature as I found my cookies darkened too quickly at 375. I would also suggest using a lightly greased cookie sheet. Recipe listed is the original recipe.

2 cups plus 2 tablespoons all-purpose flour
1 teaspoon baking soda
1 teaspoon ground cinnamon

1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 1/2 sticks (12 tablespoons) unsalted butter, at room temperature
1 cup granulated sugar
1 large egg, at room temperature
1 teaspoon pure vanilla extract
2/3 cup golden raisins
1 1/4 cups confectioners' sugar
2 tablespoons milk
2 tablespoons finely chopped pistachios

Steps:

  • Puree the persimmons in a mini food processor or blender until smooth; set aside.
  • Whisk the flour, baking soda, cinnamon, cloves, nutmeg and salt in a medium bowl. Beat the butter and granulated sugar in a large bowl with a mixer on medium-high speed until light and fluffy, about 2 minutes. Beat in the egg and vanilla until combined, then beat in 3/4 cup of the persimmon puree until combined. (The mixture may look curdled.) Reduce the mixer speed to low; gradually add the flour mixture, beating until just incorporated. Fold in the raisins with a rubber spatula. Cover and refrigerate until firm, about 30 minutes.
  • Position racks in the upper and lower thirds of the oven; preheat to 350 degrees F. Line 2 baking sheets with parchment paper. Scoop heaping tablespoonfuls of dough about 2 inches apart on the prepared baking sheets. Bake, switching the pans halfway through, until the cookies are golden brown, about 13 minutes. Let cool completely on the baking sheets.
  • Make the glaze: Whisk the confectioners' sugar and milk in a small bowl. Spoon about 1 teaspoon of the glaze over each cookie, then sprinkle with the pistachios. Let set, 10 minutes.

1/2 cup persimmon puree
1 teaspoon baking soda
2 cups all purpose flour
1 teaspoon cinnamon
1/2 teaspoon ground cloves
1/2 teaspoon ground nutmeg
1/2 teaspoon salt
1 egg
2/3 cup white sugar
1/3 cup brown sugar
1/2 cup butter
1 cup raisins
1 cup coarsely chopped walnuts

Steps:

  • 1. Preheat oven to 350 degrees F (180 degrees C) 2. Dissolve baking soda in persimmon pulp and set aside 3. Sift flour, spices and salt together, set asside. 4. Cream together butter and sugars until fluffy, beat in egg and persimmon. Stir in dry ingredients. Stir in nuts and raisins. 5. Drop by teaspoonfuls onto buttered cooke sheet. Bake for 11-12 minutes.

1/2 c shortening
1 c white sugar
1 c brown sugar
2 eggs, beaten
1 c persimmon pulp
3 c flour, sifted
4 tsp baking powder
1/4 tsp baking soda
1/2 c milk
1 c chopped walnuts
1 tsp vanilla or maple extract
FOR CAKE FROSTING:
3 egg whites, unbeated
1 1/2 c brown sugar, firmly packed
6 Tbsp water
1 tsp vanilla
dash of salt

Steps:

  • 1. Mix persimmon with baking soda and set aside. Cream shortening, sugars and eggs together. Add milk to persimmon mixture and mix well. Mix flour and baking powder together in a seperate bowl. Add to persimmon mixture and mix well. Add creamed mixture and mix well. Mix in nuts. Bake at 350 degrees for 30 minutes or until done. Note: If doing cookies, drop by spoonfuls onto nonstick baking sheet and cook until done (probably 10-12 minutes).
  • 2. For cake frosting: When cake has cooled, put all ingredients, except vanilla, in a double boiler and beat for 7 minutes, or until peaks form. Remove from heat and add vanilla. Beat until cool and thick. Frost cake.

1 c persimmon pulp (hachiya persimmon) do not use japanese small persimmons
1 c raisins
1 c walnuts or pecans
1/2 c butter
1 tsp vanillia
1/2 tsp each of cinnamon,nutmeg and ground cloves
1/2 tsp salt
1 large egg beaten
1 c sugar
1/2 c light brown sugar
1 tsp baking soda
2 c all purpose flour

Steps:

  • 1. Add 1 teaspoon baking soda to the persimmon pulp and set aside.
  • 2. In a bowl cream sugar's and butter together add Vanillia nuts,raisins and flour beaten egg and the pulp mixture. Mix lightly
  • 3. Then add salt cinnamon cloves and nutmeg and mix together with the other ingredients well.
  • 4. drop cookies by tablesspoons on a greased baking sheet bake at 350 degrees for about 12 mins .Do not over cook you want cookies to be chewy not hard.
  • 5. You will need to get the large persimmons Hachiya Persimmon they produce alot of pulp and have a good taste the small persimmons will not have enough pulp and will be bitter.I get my persimmons when in season at a Organic market or a Farmers market.
