PINA COLADA PORK CHOPS
Steps:
- 1. Preheat grill to medium-hot. Wash hands. Squeeze juice of one lime over pork chops. Let set 5 to 8 minutes. 2. Meanwhile, warm coconut milk in small saucepan over low heat; season with salt and cayenne. Add juice of second lime and Rum to sauce. Keep warm. 3. Grill chops over indirect heat, turning once, 8 to 10 minutes or until done (internal temp 155°F). Transfer to serving platter. Serving Suggestion: Spoon sauce over chops. Garnish with scallions and cilantro, and sprinkle with juice from third lime. Serve with rice and remaining sauce.
Tips:
- Use thick-cut pork chops for best results. Thinner chops will cook too quickly and become dry.
- Make sure the pork chops are evenly browned before adding the pineapple juice and coconut milk. This will help to develop flavor and prevent the chops from becoming tough.
- Simmer the pork chops in the pineapple juice and coconut milk until they are cooked through, but not overcooked. Overcooked pork chops will become dry and tough.
- Serve the pork chops with a side of rice or vegetables. You can also top them with a dollop of sour cream or yogurt.
Conclusion:
This recipe for Pina Colada Pork Chops is a delicious and easy way to enjoy a tropical-inspired meal. The pork chops are tender and juicy, and the pineapple juice and coconut milk add a sweet and tangy flavor. This dish is sure to be a hit with your family and friends.
