1-1/4 cups ice cubes
1-1/2 cups (about 1/2 of 8-oz. tub) thawed COOL WHIP Whipped Topping

Steps:

  • Drain pineapple, reserving juice. Add boiling water into gelatin mixes in large bowl; stir 2 min. until completely dissolved. Add reserved pineapple juice and ice cubes; stir until slightly thickened. Remove and discard any unmelted ice.
  • Pour 1-1/2 cups of the gelatin into medium bowl. Stir in pineapple; set aside at room temperature until ready to use.
  • Refrigerate remaining gelatin 15 min. or until slightly thickened. Add COOL WHIP; whisk until blended. Pour into 8-inch square pan sprayed with cooking spray. Refrigerate 10 min. or until set but not firm.

2 cups all-purpose flour
½ cup white sugar
2 teaspoons baking powder
¼ teaspoon salt
½ cup unsalted butter
¼ cup milk
1 egg
1 teaspoon vanilla extract

2 tablespoons white sugar
¼ cup cornstarch

Steps:

  • Combine flour, sugar, baking powder, and salt in a bowl. Cut in butter using a pastry cutter or your hands until coarse crumbs form.

2-1/2 cups of crushed pineapple (1-1/2 14.5oz. cans), slightly drained
1 cup of sugar
2-1/2 Tablespoons of cornstarch
1/4 teaspoon of salt
Pastry Crust:
3-1/2 cups of flour
1-1/2 Tablespoons of Baking Powder
1/2 teaspoon of bakings soda
1/2 teaspoon salt
1/2 cup of sugar
2 sticks of butter, slightly chilled
1 cup of sour cream
3 large egg yolks, slightly beaten
Topping:
1 jar of Maraschino Cherries, drained and cut in half
1 small can of mixed chopped nuts (sundae sized nuts)

Steps:

  • Fruit Filling: Combine all ingredients in a medium saucepan and cook over low heat until think and clear. Set aside to slightly cool. Pastry: Sift dry ingredients together in mixing bowl. Cut in the butter with a pastry cutter until it resembles small pea sized crumbs. Add sour cream and beaten egg yolks and mix until it comes together like a pie dough. Turn on floured board and knead till smooth. Roll out 2/3 of dough and press into a greased 13x18 jelly roll pan (use flour to prevent sticking). Pour slightly cooled fruit filling over crust. Roll out remainder of dough and cut into a strips. Form a lattice top on filling. Top with maraschino cherries mixture of chopped nuts. Bake for 30 minutes in a 350 degree oven (medium rack) until golden brown. Cool completely before cutting into small squares. Store covered in refrigerator after cutting.

At times more flour, little at a time, may have to be added to make it easier to roll without the dough falling apart. It is a very forgiving dough, though. If you seem to have extra filling left over it may be used to make small tarts using pie crust dough.

3 (20 ounce) cans crushed pineapple
1 2/3 cups granulated sugar
3 teaspoons minute tapioca
5 cups all-purpose flour
3/4 cup sugar

2 whole eggs
1 cup butter or 1 cup margarine
3/4 cup milk (start with 1/2 cup milk)

Steps:

  • Place filling ingredients in a large saucepot. Allow to reach boiling point. Reduce heat and let simmer 5 minutes, mixing often. Remove from heat and let cool completely. May be done earlier in the day or day before.

  • In a large bowl work the flour and the butter (or margarine) as you would for pie crust.
  • Add the sugar, salt, baking powder, baking soda and mix well.
  • Add vanilla, eggs and milk, adding a little at a time until dough comes together. Depending on the flour you may have to add a little more.
  • Dough should be pliable enough to be able to roll out on a floured surface. Divide into 2 pieces.
  • Take one piece and roll out dusting with sufficient flour to prevent sticking. Using a 12x17 cookie sheet with sides, place dough into ungreased pan allowing the sides to come up the sides. Don't cut off excess dough.
  • Pour in filling and even out making sure the corners are evenly filled inches (Filling recipe follows).
  • Again, flour surface and roll out other piece of dough and place on top.
  • Press dough around the edges to seal in pineapple filling. Then cut around to remove excess dough. Brush top with well beaten egg. Bake 350 deg. for 45 minutes.
  • Let cool. Cut into desired squares. May be dusted with confectioners sugar.
