8 stalks Asparagus, Trimmed, Each Stalk Cut In Half
1 tbsp. Thinly Sliced Red Onion
6 oz. weight Center Cut Salmon Fillet
2 tsp. Olive Oil
3 slices (thin) Lemon
Kosher Salt And Black Pepper

Steps:

  • Preheat oven to 375ºF. Prepare a large oval of parchment paper and fold it in half.Place thinly sliced pieces of potato on the bottom half of the parchment. Add asparagus pieces and red onion slices. Drizzle 1 teaspoon of olive oil and then sprinkle with kosher salt and a little fresh chopped parsley.Place salmon fillet on the vegetables. Drizzle salmon with the remaining teaspoon olive oil and sprinkle with kosher salt and black pepper. Top with lemon slices and thyme leaves.Fold the parchment paper over starting at one corner and pinch the edges over to close the packet. Four 6-ounce skinless salmon fillets
2 cups teriyaki sauce
1 tablespoon vegetable oil
2 limes
One 8.5-ounce pouch microwave jasmine rice
1/3 cup loosely packed fresh cilantro leaves

Steps:

  • Add the salmon to a shallow dish and pour the teriyaki sauce over the fillets. Using a pair of tongs, flip the fillets to coat them completely in the sauce.
  • In a large skillet, heat the vegetable oil over medium-high heat. Add the fillets to the skillet and cook on the first side for 5 minutes, being careful not to let them burn. Carefully flip the fillets and cook another 2 minutes on the second side. Remove to a plate and set aside.
  • Pour the remaining teriyaki sauce from the shallow dish into the hot skillet. Grate in the zest of 1/2 lime and allow the mixture to bubble and reduce for a few minutes. You do not want it to be super thick or sticky. Once reduced gently, nestle the salmon back into the skillet and spoon the sauce over top.
  • Microwave the pouch of rice according to the directions on the package. Pour the rice onto a serving platter.

Zest of 1 lime
1 tablespoon vegetable oil
Four 6-ounce skinless center-cut salmon fillets, patted dry
1/3 cup honey
1/3 cup soy sauce
1 tablespoon rice wine vinegar
1 teaspoon ginger, finely grated
2 cloves garlic, grated
Juice of 1 lime and 1/2 lime, thinly sliced into half moons
Cilantro leaves, to garnish
1 bunch broccolini, cleaned with stalks trimmed to 3 inches long

Steps:

  • For the lime rice: Cook the rice according to the package instructions and keep warm.
  • For the salmon: Heat a large skillet over medium-high heat. Add the vegetable oil and heat until the oil shimmers. Add the salmon flesh-side down and sear until golden brown, about 3 minutes.
  • Meanwhile, make the glaze: Whisk together the honey, soy sauce, vinegar, ginger, garlic and lime juice in a bowl.

FOR THE DRESSING:
1 clove Small, Garlic
3 Anchovy Fillets (See Note)
2 Egg Yolks
1 tbsp. Dijon Mustard
3 tbsp. Freshly Squeezed Lemon Juice
2 tbsp. Water
1/2 tsp. Honey
1/2 c. Extra Virgin Olive Oil
1/3 c. Freshly Grated Parmesan Cheese
FOR THE SALMON:
1 whole Fresh Salmon Fillet
1/2 tsp. Sea Salt
Generous Pinch Of Black Pepper
2 cloves Minced Garlic
2 whole Lemons, One Sliced And One Cut Into Wedges
3 sprigs Thyme, Or More To Taste
2 tbsp. Butter, Or More As Needed
FOR THE SALAD:
3 Romaine Hearts, Chopped
1 English Cucumber, Chopped
1 pt. Cherry Or Grape Tomatoes, Halved
1 c. Fresh Parmesan Shavings
1/3 c. Sunflower Seeds

Steps:

  • To make the dressing, combine all of the ingredients (except the oil and Parmesan) in a food process or or blender. Blend to combine. While the machine is running, drizzle in the oil. Add the Parmesan and pulse to combine. Store, chilled, until ready to use. Can be made a day or two ahead of time.To make the salmon, preheat grill to high heat. Cut a piece of aluminum foil twice as long as your salmon fillet and lay it on the counter. Place the fillet on one half of the foil (not the center). Sprinkle with salt, pepper, and garlic. Lay the slices from 1 of the lemons on top as well as the thyme sprigs. Put little pats of butter along the fillet on top. Fold the foil over to cover the fillet and fold the edges to seal. Turn the grill down to medium-high heat and place the packet in the center of the grill. Cook for about 10-12 minutes, until the fillet flakes easily with a fork and the salmon is just barely cooked through. Remove from the grill and let it cool.Assemble the salads by putting a bed of lettuce on each dish. Add some salmon, cucumbers, tomatoes, Parmesan shavings, sunflower seeds, and a drizzle of Caesar dressing. Enjoy!Notes:1. If anchovies freak you out, you can substitute 1/2 teaspoon of anchovy paste or 1 teaspoon Worcestershire sauce. 2. If you'd rather use your oven broiler, broil for 12-15 minutes. 2 tablespoons finely chopped fresh cilantro

Steps:

  • Add the oil and 1 tablespoon of the butter to a nonstick skillet and place over medium-high heat. Season the salmon on both sides with salt and pepper. 3/4 red bell pepper, quartered
3/4 green bell pepper, quartered
1/2 bunch asparagus, ends trimmed
2 tablespoons olive oil
3/4 cup store-bought Greek vinaigrette
1/2 yellow onion, sliced into thick half-moons
Four 6-ounce skinless salmon fillets
1/2 cup crumbled feta
1/4 cup kalamata olives, roughly chopped
2 tablespoons chopped fresh parsley

Steps:

  • Preheat a grill or grill pan over medium-high heat.
  • Put the zucchini, bell peppers and asparagus in a large bowl and toss with a scant 1 tablespoon of the olive oil and scant 1/4 cup of the vinaigrette, making sure everything is nice and coated. Transfer the coated veggies to the grill. Add the onions directly to the grill and give them a good brush with the vinaigrette and olive oil mixture. Grill, turning the veggies every 2 minutes, until tender and well-marked, about 8 minutes. Remove to a serving platter.
  • Pat the salmon dry with a paper towel. Reserve 2 tablespoons of the vinaigrette for serving, then brush the salmon on each side with 1/2 tablespoon of the remaining vinaigrette; drizzle on both sides with the remaining olive oil. Grill the salmon for 2 minutes, then rotate 45 degrees and cook for another 2 minutes. After 4 minutes total, flip the salmon and grill on the other side for 2 minutes, then rotate and cook for 2 minutes more. Brush with some of the remaining vinaigrette while cooking if needed.

1 lemon, zested and juiced
1 cup (2 sticks) salted butter, melted and hot
1/2 teaspoon kosher salt
Pinch of freshly ground black pepper
1 tablespoon minced fresh chives
1 tablespoon minced fresh parsley
2 teaspoons minced fresh dill
1 bunch asparagus, trimmed
6 tablespoons salted butter, melted
Kosher salt and freshly ground black pepper
4 thick slices sourdough bread
1 tablespoon white vinegar
4 large eggs
8 ounces smoked salmon
Chopped chives, for serving
