Yield Makes about 1 cup

Number Of Ingredients 6

three 3.5-ounce logs of mild soft goat cheese such as Montrachet
1 stick (1/2 cup) unsalted butter, softened
1 large garlic clove, minced and mashed to a paste with 1 teaspoon salt
1/4 cup chopped pistachio nuts, toasted lightly and cooled
1/4 cup thinly sliced chives plus chive blades for garnish
1 loaf of French bread, cut into 1/4-inch-thick slices and toasted lightly

Steps:

  • In a bowl with an electric mixer beat together the goat cheese, the butter, the garlic paste, the pistachio nuts, the sliced chives, and salt and pepper to taste until the mixture is combined well, spoon the spread into a serving dish, and chill it, its surface covered with plastic wrap, overnight. The spread may be made 2 days in advance and kept covered and chilled. Garnish the spread with the chive blades and serve it with the toasts.

Tips:

  • Choose a Firm Cheese: Opt for a semi-hard cheese like cheddar, colby, mozzarella, or monterey jack for ease of handling and cutting.
  • Chill the Cheese Log: Freeze the cheese log for at least an hour before dipping it in the coating mixture for a cleaner and more even coating.
  • Use Quality Pistachios: Select fresh, vibrant green pistachios; stale or discolored nuts can compromise the flavor and appearance of the dish.
  • Finely Chop the Pistachios: Ensure the pistachios are finely chopped to create a uniform coating and prevent large pieces from falling off.
  • Press the Pistachios Firmly: When coating the cheese log, press the pistachios firmly into the surface to ensure they adhere well and create a cohesive coating.
  • Chill Before Serving: Refrigerate the coated cheese log for at least 30 minutes before serving to allow the coating to set and the flavors to meld.

Conclusion:

The pistachio-covered cheese log is a delightful appetizer or snack that combines the creamy richness of cheese with the nutty flavor of pistachios. It's a versatile dish that can be tailored to your taste preferences by choosing different types of cheese and nuts. With its elegant presentation and irresistible taste, this recipe is sure to impress your guests at any gathering.
