4 (6-ounce) pieces arctic char fillet with skin
3 tablespoons pistachio or pecan oil, divided
1 navel orange
1 tablespoon fresh lemon juice, or to taste
1 scallion, thinly sliced
2 tablespoons chopped pistachios or pecans

Steps:

  • Preheat broiler.
  • Put fish, skin side down, on foil-lined rack of a broiler pan. Sprinkle with 1/8 teaspoon salt and 1/8 teaspoon pepper (total), then brush with 1 tablespoon nut oil.
  • Broil 4 to 5 inches from heat until just cooked through, 6 to 8 minutes.
  • Meanwhile, grate zest from orange with a Microplane and squeeze 1/4 cup juice.
  • Whisk together zest, orange juice, lemon juice, 1/4 teaspoon salt, and 1/8 teaspoon pepper, then add remaining 2 tablespoons nut oil in a slow stream, whisking. Stir in scallion.
  • Transfer fillets (without skin; it will be stuck to foil) with a metal spatula to plates, then drizzle with some of vinaigrette and sprinkle with nuts. Serve remaining vinaigrette on the side.

I couldn't find any recipe that sounded tasty on the net for arctic char so I decided to try my cooking talent and come up with my own recipe. My husband and I couldn't believe how delicious this turned out, all of the flavors balanced perfectly. He wasn't hungry that night and ended up eating majority of the fish, haha! This recipe will not disappoint.

1 (10 ounce) fillet arctic char, rinsed and patted dry
1 pinch sea salt to taste
1 lime, zested and juiced
¼ cup olive oil
¼ cup sherry wine
3 sprigs rosemary, leaves stripped
2 cloves garlic
ground black pepper to taste
1 teaspoon cayenne pepper, or to taste

Steps:

  • Preheat oven to 400 degrees F (200 degrees C). Line a baking dish with aluminum foil.
  • Season arctic char with salt, place in prepared baking dish, and sprinkle with lime zest.
  • Combine lime juice, olive oil, sherry, rosemary, and garlic in a food processor; pulse until garlic is finely chopped. Spread mixture over fish and season with black pepper and cayenne pepper.

1/2 cup packed fresh basil leaves
2 tablespoons minced shallot
1/4 teaspoon salt
1/4 teaspoon black pepper
6 1/2 tablespoons unsalted butter, softened
6 pieces arctic char fillet (1 to 1 1/4 inches thick) with skin (6 ounces each)
1/2 tablespoon vegetable oil
