1 tablespoon champagne vinegar
2 tablespoons extra-virgin olive oil

3 plums, pitted and halved
1 tablespoon olive oil

1 head radicchio, roughly chopped

1/3 cup crumbled feta cheese
1/4 cup salted roasted pistachios, chopped

Steps:

  • Preheat a grill or grill pan to medium high.
  • For the dressing: In a large bowl whisk together the honey, vinegar, extra-virgin olive oil and 1/4 teaspoon salt until emulsified. Set the bowl aside.
  • For the salad: Drizzle the plums with the olive oil and season with 1/4 teaspoon salt. Place the plums on the hot grill and cook until golden brown all over, about 1 minute per side. Remove from the grill and let cool slightly before cutting into wedges.
  • Add the radicchio and endive to the bowl with the dressing, season with 1/4 teaspoon salt and toss well to coat. Add the plums and toss gently. Sprinkle with the feta and pistachios.

1 cup uncooked wild rice
salt to taste
1 medium head radicchio, cut into wedges
2 large plums, pitted and cut into wedges
2 tablespoons olive oil, divided, or as needed

Steps:

  • Bring water, wild rice, and salt to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until rice is tender, 30 to 45 minutes. Drain any excess liquid, fluff rice with a fork, and cook uncovered 5 minutes more. Set aside.
  • Preheat an outdoor grill for high heat and lightly oil the grate.

Steps:

  • Bring plums and 3/4 cup water to a boil in a small saucepan. Reduce heat to medium-high and simmer, stirring occasionally and mashing plums with the back of a spoon, until plums have completely broken down, about 15 minutes.
  • Pour plum mixture through a fine-mesh sieve set over a small bowl, pressing on solids to extract as much purée as possible; discard solids in sieve. Let purée cool.

1 large pork tenderloin (about 1 1/4 pounds)

Steps:

  • Preheat a grill to medium high. Combine the five-spice powder, brown sugar and cayenne in a small bowl. Butterfly the pork: Slice lengthwise down the center, stopping about ½ inch before cutting all the way through. Open the pork like a book and flatten slightly with your hands. Lay a piece of plastic wrap on top and pound with the flat side of a meat mallet or a skillet until ½ inch thick. Season with salt and black pepper, then rub all over with the five-spice mixture; set aside. (This can be done up to 2 hours ahead; cover and refrigerate.)
  • Make the dressing: Whisk the vinegar, honey, soy sauce, mustard and ginger in a small bowl. Slowly whisk in 1/4 cup vegetable oil until smooth. Refrigerate until ready to serve.
  • Brush the pork with 1 tablespoon vegetable oil. Grill until well marked and just cooked through, about 6 minutes per side. Transfer to a cutting board and let rest at least 5 minutes.
  • Toss the plums and scallions with the remaining 1 tablespoon vegetable oil and season with salt and black pepper. Grill, turning, until lightly charred, about 3 minutes. Transfer to the cutting board.

1 lb boneless skinless chicken breast, cut into 2x1-inch strips
4 medium plums
1 cup pea pods, halved crosswise
6 cups mixed salad greens, torn (romaine, red leafed lettuce)

Steps:

  • Soak sixteen 5-6-inch long wooden skewers in.
  • water for 30 minutes.
  • For the vinaigrette:.
  • Combine vinegar; plum sauce, preserves, or sweet-and-sour sauce; oil; coriander;; and pepper in a small mixing bowl. Reserve 1/4 cup for brushing sauce; set aside remaining vinaigrette for salad dressing.

Steps:

  • Whisk together lime juice, vinegar, sugar, sesame oil, chile paste, and 1/4 teaspoon salt.
  • Cut squid bodies open to make flat pieces and, holding knife almost parallel to work surface (at a 30-degree angle), score inner side of flattened squid in a crosshatch pattern (do not cut all the way through). Pat squid bodies and tentacles dry and toss with vegetable oil, 1/4 teaspoon salt, and pepper.

¼ cup fresh orange juice
1 tablespoon white wine vinegar
2½ teaspoons honey
1½ teaspoons finely grated peeled ginger, divided
Pinch of kosher salt
3 large red plums, cut into thin wedges
½ small fennel bulb, thinly sliced
Olive oil, toasted sesame seeds, and fennel fronds (for serving)

Steps:

  • Whisk orange juice, vinegar, honey, 1 tsp. ginger, and salt in a medium bowl. Add plums and fennel to dressing; toss to coat. Cover and chill 30 minutes to allow fennel to soften and flavors to get to know one another. 
 Toss remaining ½ tsp. ginger into fruit salad. Serve drizzled with oil and topped with sesame seeds and fennel fronds.

2 black plums, halved, pitted, chopped
1/2 c extra-virgin olive oil
4 tsp plum vinegar or red wine vinegar
kosher salt
black pepper, freshly ground
12 c mixed greens, lightly packed (such as arugula and frisee)
4 nectarines, halved, pitted, cut into eighths
8 oz firm blue cheese, sliced
1/2 c almonds
3/4 c water
2 Tbsp water

Steps:

  • 1. Bring plums and 3/4 cup water to a boil in a small saucepan. Reduce heat to medium-high and simmer, stirring occasionally and mashing the plums with the back of a spoon, until plums have completely broken down, about 15 minutes.
  • 2. Pour plum mixture through a fine-mesh sieve set over a small bowl, pressing on the solids to extract as much puree as possible; discard solids in sieve. Let puree cool.
  • 3. Add oil, vinegar, and 2 tablespoons water to the puree; whisk to blend. Season dressing to taste with salt and pepper. (Dressing can be made 1 week ahead. Cover and chill)
  • 4. Divide the greens among plates. Scatter nectarines, cheese, and almonds over, dividing equally, and drizzle some of the dressing over. Season with salt and pepper.

2/3 cup uncooked brown rice
1-1/3 cups water
1 pound cooked medium shrimp, peeled and deveined
2 large fresh plums, sliced
1/2 cup chopped peeled cucumber
2 tablespoons minced fresh cilantro
1 green onion, chopped
1 jalapeno pepper, seeded and chopped
DRESSING:
3 tablespoons rice vinegar
3 tablespoons canola oil
2 teaspoons honey
1/2 teaspoon ground mustard
1/2 teaspoon minced fresh gingerroot
1/2 teaspoon Thai chili sauce
1 garlic clove, minced
4 cups spring mix salad greens

Steps:

  • In a small saucepan, bring rice and water to a boil. Reduce heat; cover and simmer for 30-35 minutes or until liquid is absorbed and rice is tender. Transfer to a large bowl; cool completely., Stir in the shrimp, plums, cucumber, cilantro, onion and jalapeno. In a jar with a tight-fitting lid, combine the vinegar, oil, honey, mustard, ginger, chili sauce and garlic; shake well. Pour over shrimp mixture and toss to coat. Serve over salad greens.
