I came up with this on a whim because I love Harissa and I love poached eggs. Kicks it up a bit :) Please adjust the amount of Harissa to your liking and multiply the Harissa oil as needed depending on the amount of eggs or the amount of oil you want on each egg.

2 eggs
2 teaspoons vinegar
2 teaspoons harissa
1 tablespoon olive oil
sea salt (to taste)

Steps:

  • First prepare the oil by placing the harissa and oil into a little bowl. Then poach your eggs.
  • Fill a small skillet with water.
  • Bring water to a full boil.
  • Reduce heat to just below simmering.
  • Add 1 teaspoon vinegar.
  • Break egg carefully into water.
  • If white spreads, push it toward center with a spoon.
  • Cook for approximately 4 minutes, depending on desired firmness and how soft you wan the yolk.
  • Remove egg with a slotted spoon.
  • mix the oil and harissa together to make an emulsion and drizzle over the eggs.
  • Serve on your favorite bread or toast or eat as is.

2 courgettes, coarsely grated
50g ricotta
1⁄2 lemon, zested
2 eggs, lightly beaten
20g parmesan or vegetarian alternative, grated
50g self-raising flour
60g Greek yogurt
1⁄2 tbsp rose harissa
2 tbsp olive oil
6 thin slices of pancetta (optional)
splash of white wine vinegar
2 large eggs
dill and parsley, torn, to serve

Steps:

  • Line a bowl with a clean cloth and add the courgette with a pinch of salt. Set aside for 30 mins, then use the cloth to squeeze out the excess liquid. Tip the courgette into a bowl with the ricotta, lemon zest, eggs and parmesan, then stir to combine. Fold in the flour and some seasoning.
  • Stir the yogurt and harissa together in a small bowl and season with a pinch of salt. Set aside.
  • Heat the oven to 180C/160C fan/gas 4. Heat the oil in a non-stick frying pan and spoon in six mounds of the courgette mixture. Cook over a medium heat for 3-4 mins each side until golden brown. Transfer to a baking sheet and bake for 10 mins.
  • Meanwhile, heat your grill to high, then cook the pancetta, if using, for 2-3 mins on each side until crisp.
  • Bring a pan of water to the boil. Drizzle a little of the vinegar into a ramekin and crack an egg into it. Swirl the water in the pan with a wooden spoon to create a whirlpool in the middle, then gently tip the egg into it and simmer for 3 mins. Repeat with the second egg. Serve three fritters stacked on each plate, topped with an egg and three slices of pancetta, alongside a dollop of the harissa yogurt, then scatter over the herbs.

Make these spiced green pancakes with poached eggs for brunch - they not only taste great, but boast the added benefits of iron and vitamin K

100g spinach
50g butter
3 eggs
150g plain flour
¼ tsp ground nutmeg
1 tsp baking powder
semi-skimmed milk
150g natural yogurt
1-2 tbsp rose harissa
white vinegar
1 tsp nigella seeds (optional)

Steps:

  • Cook the spinach in a non-stick frying pan over a medium heat for a few minutes until wilted. Transfer to a food processor, then return the pan to the heat and melt the butter. Cool the butter for a minute, then pour into the food processor with the spinach. Crack in one egg and blitz until the spinach is finely chopped (a few green flecks are fine).
  • Mix the flour, nutmeg and baking powder together, then add to the food processor and blitz to combine. Pour in 250ml milk and blitz for another 1-2 mins until a batter forms. If you prefer thinner pancakes, add another 50ml milk. Pour the batter into a jug or bowl.
  • Mix the yogurt with the harissa in a small bowl to taste. Set aside. Return the pan to a medium-low heat. When the residual butter in the pan is sizzling, pour in a ladleful of batter and cook for 2 mins until the top of the pancake is nearly set. Flip and cook for another 1 min until cooked and lightly golden. Transfer to a baking tray inside a low oven to keep warm. Repeat with the rest of the batter, making four to six pancakes.
  • Crack the remaining eggs into ramekins. Bring a pan of water to a simmer, add a drop of vinegar and stir to create a gentle whirlpool. Tip in one egg and cook for 3-4 mins until the white is set. Lift onto kitchen paper to drain using a slotted spoon. Repeat with the remaining egg. Top the pancakes with the harissa yogurt, poached eggs and a sprinkling of nigella seeds, if you like.

Tips:

  • When poaching eggs, it's important to use fresh eggs. Older eggs will not hold their shape as well and are more likely to break apart.
  • Bring the water to a gentle simmer before adding the eggs. If the water is boiling, the eggs will cook too quickly and the whites will become tough.
