POOHRONA'S SQUASH N' ONIONS
Light and full of flavor. This dish is one of my favorites. It is best when using yellow squash aka summer squash but green zucchini can be used.

- Heat oil and butter in ac large skillet over medium heat.
- Add garlic and cook for 1-2 minutes being careful not to brown.
- Add squash , onions, salt and pepper. Cover and reduce heat to medium-low and cook for 10 minutes.
- Remove lid and saute for about 5 minutes or until desired tenderness is reached.

- Combine zucchini and onions in a large stockpot. Cover with water, and boil until the vegetables are tender, about 30 minutes. Drain in a colander, pushing firmly to extract all the liquid.
- Combine the Gruyère, ricotta, garlic, salt and pepper. Add the vegetables, mix well and adjust the seasonings. Butter a 3-quart casserole and fill with the squash mixture. Cover with plastic wrap and refrigerate until ready to cook.
- Preheat oven to 400 degrees. Uncover the casserole and bake on middle shelf until golden brown and bubbly, about 30 minutes.

I found I like the margarine better and I like the squash to cook so that you have a few browned pieces in. Oooohh, that gives it so much flavor!

- Wash and Cut up squash, potatoes and onions.
- Melt butter in lg. fry pan.
- Add squash.
- Add potatoes on top of squash.

- Preheat oven to 350 degrees F (175 degrees C). Grease a 9x9-inch baking dish with about 1/2 tablespoon of butter.
- Melt remaining 1 tablespoon of butter in a large cast-iron skillet over medium heat, and cook the summer squash and zucchini until the squash pieces begin to brown, 10 to 15 minutes, stirring often. Sprinkle with salt and black pepper, and spread into the bottom of the prepared baking dish. Sprinkle with about 1/3 of the chopped onions.
- Mix together the white Cheddar cheese and yellow Cheddar cheese in a bowl until thoroughly combined, and sprinkle about 1/2 cup of the cheese mixture over the onions. Drizzle with about 1 tablespoon of the sweetened condensed milk. Repeat sprinkling cheese, onions, and condensed milk twice more, then top with remaining cheese mixture.
- Bake in the preheated oven until the casserole is golden brown and the onions are tender, about 30 minutes.
