A traditional cup-shaped cookie traditionally filled with jelly and dusted with powdered sugar, the pope's valentine cookie is a classic treat that has special significance in the Pennsylvania Dutch communities where it originated. Similar to other sandwich cookies like Russian tea cakes or Viennese whirls, these cookies consist of two layers of dough that are pressed over a special wooden mold to create a decorative design. The result is a unique and delicious cookie that is perfect for holidays, parties, and other special occasions.

Tips:

  • Prep measured ingredients. Before starting to bake, have all ingredients measured and ready. Line baking sheets with parchment paper to prevent sticking.
  • Room temperature ingredients. Bring butter, eggs, and milk to room temperature before mixing. This will help them blend more evenly.
  • Cream butter and sugar until fluffy. Use an electric mixer to cream together butter and sugar until light and fluffy. This will help incorporate air into the mixture, resulting in a more tender cookie.
  • Add eggs one at a time. Beat in eggs one at a time, waiting until each egg is fully incorporated before adding the next.
  • Gradually add dry ingredients. Add flour and baking powder to the wet ingredients gradually, mixing until just combined.
  • Chill the dough. Refrigerate the dough for at least 30 minutes before rolling and cutting. This will help prevent the cookies from spreading too much in the oven.
  • Bake cookies until the edges are golden brown. Bake cookies in a preheated oven until the edges are golden brown and the centers are set. Do not over-bake, as this will make the cookies dry and crumbly.
  • Cool cookies completely before decorating. Let cookies cool completely on a wire rack before decorating. This will help prevent the frosting from melting.
