Yield Makes 6 servings

Number Of Ingredients 22

For vinaigrette
1 lemon
1 stalk fresh lemongrass, 1 or 2 tough outer leaves discarded and root end trimmed
3/4 cup chicken stock or broth
1 small (1 1/2- to 2-inch) dried chile (preferably Thai)
6 (2- by 1 1/4-inch) fresh or frozen makrut lime leaves
1/4 cup olive oil
1 1/2 teaspoons cornstarch dissolved in 1 teaspoon water
1 teaspoon minced fresh oregano
1 teaspoon minced fresh chervil
1 teaspoon minced fresh flat-leaf parsley
For salad
1 Meyer lemon
6 firm-ripe small Seckel pears (3/4 pound total)
6 radishes, trimmed
3/4 pound purslane, coarse stems discarded
1 1/2 tablespoons olive oil
1 tablespoon fresh lemon juice
Fleur de sel to taste
Accompaniment: jasmine rice crackers
Special Equipment
a Japanese Benriner or other adjustable-blade slicer

Steps:

  • Make vinaigrette:
  • Cut peel, including white pith, from lemon with a small sharp knife. Working over a bowl to catch juices, cut lemon segments free from membranes, letting segments drop into bowl.
  • Crush lemongrass stalk with side of a heavy knife (to release oils), then thinly slice. Bring stock, lemongrass, and chile to a boil in a 1- to 1 1/2-quart heavy saucepan. Cover pan and remove from heat, then let stand 20 minutes.
  • Return to a boil and add lemon segments with juice and lime leaves. Cover pan and remove from heat, then let stand 20 minutes more.
  • Pour mixture through a fine-mesh sieve into a small bowl, discarding solids, then return to saucepan and whisk in oil. Bring vinaigrette to a boil and whisk in cornstarch mixture, then simmer, whisking occasionally, 2 minutes. Cool completely. Whisk in herbs and salt and pepper to taste.
  • Make salad:
  • Using slicer, cut Meyer lemon (with skin) crosswise, pears lengthwise (discarding cores), and radishes lengthwise into very thin slices (about 1/16 inch thick) and transfer to a large bowl. Add purslane, oil, lemon juice, and fleur de sel and pepper to taste and toss gently.
  • Divide salad among 6 plates and spoon vinaigrette over and around each. Serve salads with jasmine crackers on the side.

EASY MEYER LEMON VINAIGRETTE (VEGAN FRIENDLY)

Easy Meyer Lemon Vinaigrette (Vegan Friendly) image

When we spotted this recipe in the February 2011 issue of Sunset we knew it had to be good. I prepared two versions: one with dark aged balsamic and the second with white balsamic. For a vegan version, skip the mayonnaise or use an egg-free mayonnaise. It was suggested to try the dressing on greens such as oak leaf, mizuna and/or arugula. My husband and I enjoyed it on all three and it was especially tasty on zippy arugula! I would skip the garlic depending on your main dish and/or other items on the menu.

1 meyer lemon, zest of
2 tablespoons meyer lemon juice (approximately 1 large lemon)

JASMINE RICE CRACKER

Jasmine Rice Cracker image

The rice grains puff slightly during frying, making these crackers wonderfully light and crunchy. They are also a great alternative to croutons on soups.

Provided by Laurent Gras

Categories     Bread     Rice     Bake     Quick & Easy     Fall     Gourmet

Yield Makes about 24

Number Of Ingredients 7

1 1/2 cups jasmine rice
2 1/2 cups water
1 teaspoon table salt
6 cups grapeseed or vegetable oil
Fleur de sel to taste
Special Equipment
a deep-fat thermometer

Steps:

  • Wash rice in 3 or 4 changes of cold water in a large bowl, then drain well in a large sieve and transfer to a 2- to 3-quart heavy saucepan. Add 2 1/2 cups water and table salt and boil, uncovered, without stirring, until steam holes appear on surface of rice and grains on top appear dry, about 8 minutes. Reduce heat to as low as possible, then cover pan with a tight-fitting lid and cook 15 minutes more.
  • Remove pan from heat and let stand, covered, 5 minutes, then fluff rice with a fork. Transfer to a bowl and cool to warm.
  • Put oven rack in middle position and preheat oven to 350°F. Lightly oil a 13- by 9- by 2-inch metal baking pan.
  • Press rice evenly into baking pan with lightly oiled hands. Put pan in oven and reduce oven temperature to 250°F. Bake rice until dry, about 3 hours. Cool completely in pan on a rack, then break into 2- to 3-inch pieces.
  • Heat oil in a deep 4- to 5-quart heavy pot over moderately high heat until it registers 350°F on thermometer. Fry pieces of rice in batches of 4 to 6, turning over once, until pale golden, about 2 minutes. (Return oil to 350°F between batches.) Transfer with a slotted spoon to paper towels to drain and season with fleur de sel.

MEYER LEMON VINAIGRETTE

Meyer Lemon Vinaigrette image

When Meyer lemons are in season, typically between November and March, be sure to snag some up to make this lemon-Parmesan dressing. Meyer lemons are much less tart and acidic than traditional lemons, like a cross between a lemon and a mandarin. They're also sweeter, so no additional sugar is needed. I love this on kale salad, but also drizzled over roasted veggies or grilled salmon or trout.
