BIG-BATCH RANCHERO SAUCE

Big-Batch Ranchero Sauce image

There is no other aroma coming from the kitchen - not truffle, not freshly peeled orange, not a chocolate cake baking - that will stop you in your tracks and make you inhale as deeply as this ranchero sauce simmering away. Here's a large batch to use in many ways: Poach eggs in it for brunch, simmer shrimp in it for taco filling, or spoon it over shredded chicken with avocado slices inside a flour tortilla for lunch for the kiddos. Put it in tightly sealed Mason jars and bring it to friends as a host gift.

Categories     condiments, sauces and gravies

Time 1h15m

Yield 3 quarts (a ton; that's the point)

Number Of Ingredients 7

6 1/2 pounds/about 100 ounces canned whole, peeled plum tomatoes and their juices (or one restaurant-style No. 10 can)
1 bunch cilantro, leaves and stems washed and roughly chopped
1 cup peeled garlic cloves
4 serrano chiles, stems and seeds removed then roughly chopped
2 guajillo chiles, stems detached
1 tablespoon achiote paste
Kosher salt, to taste

Steps:

  • Combine everything in a large pot or rondeau, and simmer over gentle heat for 1 hour, stirring occasionally to prevent any scorching on the bottom. Add a little water if it becomes any thicker than ketchup. Allow to cool before puréeing.
  • Working in a blender in batches, purée until smooth. Check the salt seasoning. Let cool.
  • Transfer to quart or pint containers, and stock your freezer, or put the sauce in something more attractive - rubber-sealed jars with hinged lids? - to make gifts of the stuff. Ranchero sauce keeps well in the refrigerator for up to 2 weeks, or in the freezer for up to 1 year. (It may separate a little, in which case you can simply reheat and give a new buzz in a blender to reunify.)

RANCHERO SAUCE

Ranchero Sauce image

I love making my ranchero sauce. It stores well and goes so well with so many different south-west and Mexican foods. I prefer to make my ranchero sauce with heirloom or Mexican Organic tomatoes. I am a huge advocate of not using those genetically modified freaks people call tomatoes traditionally. They are orange, watery with...

Provided by Maggie May Schill

Categories     Other Sauces

Time 1h20m

Number Of Ingredients 15

3 medium heirloom tomatoes, chopped
1 small yellow tomato, chopped
2 c red onion, diced
1 medium red bell pepper, diced, seeded and ribs removed.
2 c fresh cilantro, chopped
4-5 clove garlic, minced
1/2 c veggie or chicken broth
1 1/2 Tbsp salt
1 1/2 tsp chili powder
4 tsp ground cumin
1 medium jalapeno pepper, diced, seeded and ribs removed
2 Tbsp olive oil
1 Tbsp lime juice
1 1/2 tsp smoked paprika
salt, pepper and cayenne pepper to taste!

Steps:

  • 1. In a medium sauce pan over medium heat, add oil and smoke.
  • 2. Sweat garlic and onion in oil until tender.
  • 3. Add jalapeno and cook for 10 minutes covered.
  • 4. Add tomatoes with salt. (salt will draw the liquid from tomatoes.) Cook covered for 30 minutes on medium low heat.
  • 5. Drain excess tomato liquid from pan.
  • 6. Add cilantro and broth to pan. Simmer for 5 minutes covered. (Adjust the thickness of the sauce with broth. Be sure to drain all the excess liquid you can, the tomato liquid is super watery, but the 1/2 cup of broth will add the extra flavor you are looking for. You might need more than 1/2 cup or a little less depending on how much liquid your tomatoes give up while cooking.)
  • 7. Add paprika, salt, pepper, cayenne, chilli, lime juice and cumin.
  • 8. Blend mixture with immersion blender, or transfer to a standard blender until smooth. (If you like chunky sauce don't blend it, tastes the same whether smooth or not.)
  • 9. Simmer the sauce for about 15 minutes before serving. A little tip: if you find the sauce too watery after you add your stock, no big deal, simmer it uncovered, it'll thicken itself up in no time.
  • 10. In this entry I served ranchero sauce over my black bean quesadilla.

RANCHERO SAUCE (SALSA RANCHERO)

Ranchero Sauce (Salsa Ranchero) image

I made this sauce one day by fooling around with a recipe in "Border Cooking." I had on hand some great homemade chicken broth and a fresh batch of my Diablo Dust (chile powder made with guajillos and anchos). A good quality chile powder like Gephardt's works nicely, and canned broth should be fine, although, I think homemade is superior. Use this sauce for huevos rancheros, egg dishes, burritos, chimichangas, enchiladas, etc. It is not a table sauce, but is best for topping hot foods.

VEGGIE ENCHILADAS WITH RANCHERO SAUCE

VEGGIE ENCHILADAS WITH RANCHERO SAUCE image

Categories     Cheese     Vegetable     Vegetarian

Yield 8

Number Of Ingredients 27

Enchiladas:
1 1/2 cups grated zuchini or chayote squash
1 cup grated carrots
1/2 cup diced celery
1 cup diced red onion
1 or 2 jalapenos, seeds removed
2 cloves garlic
1/4 cup cooking oil
1 1/2 cheese, monterey jack and sharp cheddar mixed
2 dozen corn tortillas
salt and pepper
1 T cumin
1 T chili powder
1 t cayenne
extra oil and spices to soften tortillas before rolling
Ranchero Sauce:
1 lb roma tomatoes, chopped (or 16 oz can diced tomatoes, drained)
1 med onion, chopped
1 fresh jalapeno, sliced thin
1 roasted poblano, peeled, seeded and chopped
1 sm can tomato sauce
1/4 cup oil
1 t dried mexican oregano OR 1/4 cup cilanto, but not both
salt and pepper
Garnish:
1/2 cup grated cheese
1/4 cup chopped cilantro

Steps:

  • First make your sauce. Saute onions, jalapenos, and fresh tomatos in oil. Salt generously to release the water in the tomatos, it makes a better sauce. If you are using canned tomatos, add them after onions are cooked soft. Then add poblano, tomato sauce and oregano, cover and let simmer. If you use cilantro, don't add it until you are ready to put the sauce on the enchiladas, or it can turn bitter To make enchilada filling: Grate squash and then carrots in food processor, set aside. In a heavy skillet with a lid, saute onion, celery, carrot, garlic, spices and jalapeno in oil until onions soften, 5-7 minutes. Add grated squash on top of sauted mixture, cover and let simmer until squash is steamed, about 10 minutes. In a large bowl, mix cooked veggies with grated cheese. This is the filling for your enchiladas. To assemble enchiladas, first ladle 1/2 cup sauce into a cassarole dish. Heat about 2 T. oil in a small skillet, and sprinkle in a little chili powder. Using tongs, fry tortillas two at a time quickly in hot oil, just long enough to soften. Fresh tortillas will bubble up a little, so watch out for the steam. Set them on a plate and cover while you fry the rest, adding more oil and chili powder to the pan as needed. Put a softened tortilla in the cassarole dish, fill with about 2 T veggies and roll up tightly. Keep going until your dish is full. Pack them in fairly tight, so they will not unroll. Top with just enough sauce to cover all, then with cheese down the center of the pan so it looks nice. Bake at 350 until bubbly, about 20 minutes. Garnish with chopped cilantro and serve hot.

RANCHERO SAUCE RECIPE - (4.5/5)

Ranchero Sauce Recipe - (4.5/5) image

Provided by HeatherS

Number Of Ingredients 8

3 tbsp. olive oil
1 small onion or 1/2 large onion, finely chopped
2 garlic cloves, finely chopped
1 to 2 chopped canned chipotles in adobo, or to taste
1 to 2 tbsp. adobo sauce from canned chipotles, or to taste
1 (14-ounce) can diced tomatoes
2 tbsp. chopped cilantro, to finish
Squeeze of lime juice, to finish

Steps:

  • Heat saucepan or skillet over medium heat. Add olive oil. When olive oil is hot, add onion and garlic. Cook, stirring occasionally, until they start to soften, about 2 to 3 minutes. Add chipotles, adobo sauce and diced tomatoes. Stir to combine. Bring to a boil. Reduce and let simmer until slightly thickened, about 20 minutes. Finish with chopped cilantro and lime juice.

Tips:

  • Use fresh ingredients. Fresh tomatoes, onions, and peppers will give your ranchero sauce the best flavor.
  • Roast your vegetables. Roasting the vegetables before adding them to the sauce will caramelize them and give them a smoky flavor.
  • Use a variety of chilies. Different chilies will give your sauce a different flavor profile. For a mild sauce, use Anaheim or poblano peppers. For a medium sauce, use serrano or jalapeño peppers. And for a hot sauce, use habanero or cayenne peppers.
  • Simmer the sauce for at least 30 minutes. This will allow the flavors to meld and develop.
  • Serve the sauce with your favorite Mexican dishes. Ranchero sauce is great on tacos, burritos, enchiladas, and more.

Conclusion:

Ranchero sauce is a delicious and versatile sauce that can be used in a variety of Mexican dishes. It's easy to make and can be tailored to your own taste preferences. So next time you're looking for a flavorful and authentic Mexican sauce, give ranchero sauce a try!
