1 (16 ounce) can refried beans
1lb ground beef
16 ounces shredded cheddar cheese
1 (6 ounce) can tomato paste
2 ¼ cups water
½ teaspoon cayenne pepper
4 tablespoons chili powder
2 teaspoons salt
2 teaspoons cornstarch
¼ cup cold water
2 teaspoons distilled white vinegar
1 tablespoon dried minced onions
2 tablespoons canned jalapeno slices (minced)
10 inch flour tortillas

Steps:

  • Brown the ground beef in a large skillet over medium-high heat while breaking the meat up into small pieces with a spatula.
  • In a saucepan combine the tomato paste and water over medium heat. Stir until smooth. Add cayenne pepper, chili powder, salt, vinegar, and dried onion and stir. Add the minced jalapenos. Heat the mixture to boiling. Mix the 2 teaspoons of cornstarch with ¼ cup of cold water and pour into the sauce pan and stir. Reduce heat and simmer for 3 minutes or until the mixture has become thick. Remove from heat.
  • Once the beef has browned, drain off any excess grease. Add half of the refried beans to the beef. Slowly add 2 ½ cups of the tomato sauce mixture. Add half of the cheese and cook over low heat for 10 minutes, stirring constantly. Let simmer for 30 minutes. Spoon ¾ cup of the chili into each tortilla, add cheese and tomato sauce mixture as desired. Wrap up the tortilla.

For those of you who live in a place where Taco Bell does not sell their classic Chilito (and judging from Net, this includes alot of places), you can simply make them at home! This recipe is something I developed through trial and error. It is VERY close to the taste of the original. It also has that perfect "chilito" texture. Enjoy!! flour tortilla
1/2 lb hamburger
1 tablespoon flour
8 ounces refried beans
shredded cheddar cheese
hot sauce

Steps:

  • Brown the hamburger and crumble into very small pieces; drain, but reserve some of the fat.
  • Place hamburger back onto heat and add flour and mix until it is thick.
  • Add the beans and heat through.
  • Add the hot or mild sauce 1 packet at a time until you achieve that 'chilito' taste (usually 8 packets will do).
  • Add the cheese, enough to make a big gooey mess, under medium heat.
  • Taste, and you might need to add a little more sauce.
  • Now here is the trick for that 'chilito' texture:.
  • Take a tortilla and run warm water all over it to soften. The pop it in the microwave for 20 seconds to "steam" it.
  • Fill tortilla with hot chilito filling, fold, and eat it. There will be a smile on your face.

1 Onion
1/2 teaspoon Cayenne Pepper
1/4 cup Mild Chili Powder
2 teaspoon Salt
2 teaspoon Distilled White Vinegar
2 tablespoon Jalapeño Pepper
2 1/4 cup Water
2 teaspoon Corn Starch
3/4 cup Tomato Paste
2 cup Soy Curls
1 can Refried Beans
1 cup Vegan Cheddar Cheese
to taste Tortilla

Steps:

  • Heat coconut or olive oil in a saucepan over medium-high heat and sauté the Onion (1) until translucent. This should take about 5-10 minutes.
  • Add Jalapeño Pepper (2 tablespoon), Cayenne Pepper (1/2 teaspoon), Mild Chili Powder (1/4 cup), Distilled White Vinegar (2 teaspoon), and Salt (2 teaspoon), and stir.
  • In a bowl, dissolve the Corn Starch (2 teaspoon) in the Water (2 1/4 cup) with a whisk.
  • Add the Tomato Paste (3/4 cup) and cornstarch-water mixture to the saucepan with the onions and stir until smooth.
  • Heat the mixture until just about boiling, add the Soy Curls (2 cup) and the Refried Beans (1 can), mix well.
  • Add Vegan Cheddar Cheese (1/2 cup) and cook over low heat for 10 minutes, stirring constantly.
  • Let simmer for 30 minutes, or until thickened.
  • Spoon some chili into each Vegan Cheddar Cheese (1/2 cup), top with Tortilla (to taste), and wrap up the tortilla. I like to toast both sides to help it stay together and melt the cheese.

I'm posting this recipe in response to seeing many inaccurate copycat recipes online. This is an extremely cheap and easy item to make but every other recipe is too complicated, uses too many ingredients, and adds things which were never in Taco Bell's version. They may be good additions but they aren't Taco Bell copycats!

2 -3 tablespoons hormel no-bean chili
1 cup medium cheddar, shredded
2 -3 flour tortillas, thin ones are best

Steps:

  • Warm tortillas on a griddle. Keep warm.
  • Heat a few spoonfuls of chili in a small pot.
  • Add an equal or greater amount of cheese. More cheese than chili tastes most like Taco Bell's version.
  • Melt. Don't allow the cheese to stick and burn.
  • Wrap about a large spoonful or two of the melted chili cheese in a tortilla.
  • Makes a great chip dip. May be easily expanded to make enough for a group.
  • Optional (good) additions which make this unlike a Taco Bell version: beans, extra beef, onions, Taco sauce, other seasonings, Frito chips.

Tips:
