Black Beans with Garlic, Cumin, and Cilantro image

Categories     Bean     Garlic     Side     Vegetarian     Quick & Easy     Spring     Cilantro     Gourmet     Sugar Conscious

Yield Serves 2

Number Of Ingredients 7

a 16- to 19-ounce can black beans
2 garlic cloves
1 teaspoon ground cumin
2 tablespoons olive oil
1/3 cup tomato juice or water
3/4 teaspoon salt
2 tablespoons chopped fresh cilantro

Steps:

  • Rinse black beans and drain. Chop garlic. In a nonstick skillet cook garlic and cumin in oil over moderate heat, stirring, until fragrant. Add black beans, juice or water, and salt and cook, stirring, until beans are heated through. Stir in cilantro.

Tips:

  • Choose the Right Beans: Opt for dried red beans for the best flavor and texture. If using canned beans, rinse and drain them well before using.
  • Soak the Beans: Soaking the beans overnight or for at least 8 hours helps reduce cooking time and improves digestibility.
  • Use Fresh Ingredients: Fresh cumin and cilantro add a burst of flavor to the dip. If possible, use homemade cumin powder for the best results.
  • Don't Overcook the Beans: Overcooked beans can become mushy and lose their texture. Cook them until they are tender but still hold their shape.
  • Season to Taste: The amount of cumin, chili powder, and salt can be adjusted to your preference. Start with the suggested amounts and adjust as needed.
  • Serve with Fresh Accompaniments: Serve the dip with fresh vegetables like carrot sticks, celery sticks, or tortilla chips. You can also add a dollop of sour cream or guacamole for extra flavor.

Conclusion:

Red bean dip is a delicious, versatile, and easy-to-make appetizer or snack. With its vibrant color, creamy texture, and burst of flavors, it is sure to be a hit at your next gathering. Whether you choose to serve it with fresh vegetables, tortilla chips, or crackers, this dip is sure to satisfy.
