RED WINE VINEGAR MARINADE

Always marinate food in refrigerator; never at room temperature. Allow 1/4 to 1/2 cup of marinade for each 1 to 2 lbs. of meat. For tenderization to take place, beef must be marinated at least 6 hour or longer. Marinating longer than 24 hours causes the meat fibers on the surface to break down, resulting in a "mushy" texture. Remaining marinade may also be served as a sauce with the grilled meat or poultry. It should be heated to the boiling point before serving, if not using as a sauce it should be discarded.

Tips:

  • Choose the right cut of meat: For best results, select a tender cut of meat that will benefit from marinating. Flank steak, skirt steak, and chicken breasts are all good options.
  • Don't over-marinate: Marinating the meat for too long can make it tough. For most cuts of meat, 30 minutes to 2 hours is sufficient.
  • Use a non-reactive bowl: When marinating meat, use a glass, ceramic, or stainless steel bowl. Avoid using aluminum or iron bowls, as they can react with the acid in the marinade and alter the flavor of the meat.
  • Cover the meat completely: Make sure the meat is completely covered by the marinade. If necessary, weigh it down with a plate or bowl to keep it submerged.
  • Refrigerate the marinade: Always marinate the meat in the refrigerator. This will help to prevent bacteria from growing.
  • Discard the marinade after use: Do not reuse the marinade after it has been used to marinate meat. This can help to prevent the spread of bacteria.

Conclusion:

Red wine vinegar marinade with lime and ginger is a delicious and versatile marinade that can be used to flavor a variety of meats. It is easy to make and can be tailored to your own taste preferences. By following these tips, you can create a mouthwatering marinade that will make your next grilled or roasted meat dish a hit.
