6 large eggs
1/4 cup mayonnaise
3 tablespoons relish
1/4 teaspoon mustard
Cayenne pepper
Coarse salt
Smoked paprika, for serving (optional)

Steps:

  • Place eggs in a medium saucepan; add cold water to cover by 1 inch. Bring to a rolling boil. Remove pan from heat; cover, and let stand 7 minutes. Drain, and run eggs under cold water to cool.
  • Meanwhile, in a medium bowl, mix together mayonnaise, relish, mustard, and a large pinch of cayenne.
  • Peel eggs, and halve lengthwise. Carefully remove yolks to bowl with mayonnaise mixture, leaving whites intact.
  • Mash egg yolks with mayonnaise mixture until smooth; season with salt. Mound into egg whites. Sprinkle with paprika just before serving, if desired.

6 eggs
3 tablespoons mayonnaise
2 teaspoons prepared mustard
2 tablespoons dill pickle relish
pepper, to taste
1/4 cup cooked ham, finely chopped
paprika, garnish

Steps:

  • In a medium saucepan place eggs in a single layer. Adding enough water to cover eggs by one inch bring water to a boil. As soon as water is boiling remove from heat, cover saucepan, and let stand 15 minutes. Drain, rinse eggs with cold water and place in a bowl of ice water. Let eggs stand for 10 minutes than drain.
  • Remove eggs from water and peel. Cut lengthwise in half and remove the yolks placing them in a medium bowl. Mash yolks until smooth and add mayonnaise and mustard, blend well. Mix in relish, pepper and ham until well combined. Gently spoon mixture into egg white halves and sprinkle each with paprika. Serve immediately or cover and refrigerate until serving time.

12 large eggs
4 tablespoons unsalted butter
7 slices deli ham (about 4 ounces)
1/4 cup mayonnaise
1/4 cup relish
2 tablespoons Sriracha
Kosher salt and freshly ground pepper
1/2 cup diced roasted red peppers
Microgreens, for garnish

Steps:

  • Place the eggs in a large wide pot and cover with cold water by 1 inch. Bring to a boil, then reduce the heat to medium low and simmer 10 minutes. Drain and run under cold water until cool.
  • Meanwhile, melt the butter in a large skillet over medium-high heat. Working in batches, add the ham and fry until browned on both sides, 3 to 4 minutes. Remove to a paper towel¿lined plate, then finely chop.
  • Peel and halve the eggs. Carefully scoop out the yolks into a medium bowl and place the whites on a plate. Add the mayonnaise, relish and Sriracha to the bowl with the yolks; season with salt and pepper and mix and mash until smooth (or use a food processor to speed up this process). Stir in about three-quarters of the fried ham.
  • Transfer the yolk mixture to a piping bag and pipe into the egg whites. Top with the roasted red peppers and the remaining fried ham. Garnish with microgreens.

1 dozen hard-cooked eggs
Filling
3 tablespoons mayonnaise
3/4 teaspoon Dijon mustard
1 teaspoon minced fresh garlic
6 tablespoons purchased basil pesto
2 tablespoons very thinly sliced green onion
Salt
Topping
4 ounces very thinly sliced prosciutto, cut into short, thin strips
2 tablespoons finely chopped fresh basil
1 teaspoon extra-virgin olive oil

Steps:

  • Halve the eggs lengthwise and transfer the yolks to a mixing bowl. Set the egg white halves on a platter, cover, and refrigerate.
  • With a fork, mash the yolks to a smooth consistency. Add the mayonnaise, mustard, garlic, and pesto, and mix until smooth. (You can also do this using an electric mixer with a whip attachment.) Stir in the green onion. Taste the egg mixture and add a little salt if needed; pestos differ in salt content.
  • Spoon the mixture into a pastry bag fitted with a plain or large star tip, then pipe the mixture evenly into the egg white halves. Or fill the eggs with a spoon, dividing the filling evenly.
  • To make the topping, in a small bowl, mix together the prosciutto and basil. Drizzle with the oil and toss to coat. Top each egg half with about 1 heaping teaspoon of the mixture.
