1 cup all-purpose flour
½ cup butter, softened
1 tablespoon white sugar
1 cup white sugar
¼ cup all-purpose flour
4 cups finely chopped rhubarb
1 (8 ounce) package cream cheese, softened

1 egg
½ cup sour cream
1 tablespoon white sugar

Steps:

  • Preheat oven to 425 degrees F (220 degrees C). Grease an 11x7-inch baking dish.
  • In a bowl, mix together 1 cup flour, the softened butter, and 1 tablespoon sugar until well combined; press into the bottom of the prepared baking dish.

300g (10oz) chocolate gingernut biscuits
125g (½ cup) butter
1.25ml (¼ tsp) salt
500g (1lb) rhubarb, washed and cut into 5cm (2in) batons
1 blood orange, zest and juice
1 vanilla pod
15ml (1 tbsp) pink peppercorns [optional]
150g (¾ cup) caster sugar
500g (2 cups) cream cheese
300ml (1¼ cup) double cream
50g (½ cup) icing sugar, sifted
3 gelatin leaves

Steps:

  • Crush the biscuits in a sealable plastic bag with a rolling pin until everything turns into crumbs.
  • Mix the butter and salt with the crumbs.
  • Spoon the mixture into the base of a 23cm (9in) springform cake tin and level with the back of a spoon.
  • Place in the fridge to set.
  • Preheat the oven to 200°C / fan 180°C / 390°F / gas mark 6.
  • Line a large baking tray with parchment paper.
  • Align the rhubarb in a single layer on top of the parchment paper.
  • Sprinkle evenly with caster sugar.
  • Sprinkle with the blood orange zest and juice.
  • [Optional] Place peppercorns in muslim and tie it up. Put in the orange juice.
  • Bake in the oven for 20 minutes, then leave to cool.
  • Drain the rhubarb juices into a small saucepan and place over a low heat. Place the gelatine leaves in the liquid to soften and stir until everything is dissolved.
  • Place the liquid and three quarters of the cooled rhubarb batons into a food mixer and process until smooth. Set aside the rhubarb puree and store the remaining rhubarb batons in the fridge.
  • Place the cream cheese in a stand mixer.
  • While it's running, slowly add the icing sugar.
  • Fold the rhubarb puree into the cream cheese mixture.
  • In a separate bowl, whisk double cream until soft peaks form.
  • Fold the double cream into the cream cheese mixture a bit at a time. Repeat until the double cream is finished.
  • Remove the cheesecake base from the fridge and tip the mixture into the springform tin. Gently drop the tin onto the kitchen counter a few times to let any bubbles out.
  • Place the cheesecake in the fridge to chill for at least 6 hours.
  • Before serving, decorate with the remaining rhubarb batons. Enjoy!

1/2 cup packed brown sugar
1/4 teaspoon salt
1/4 cup cold butter
1/2 cup chopped walnuts

2 packages (8 ounces each) cream cheese, softened
3/4 cup sugar
3 eggs, lightly beaten
1 teaspoon vanilla extract
TOPPING:
1 cup sugar
1 tablespoon cornstarch
1/4 teaspoon ground cinnamon
1/4 cup water
3 cups chopped fresh or frozen rhubarb, thawed and drained

Steps:

  • In a bowl, combine flour, brown sugar and salt; cut in butter until mixture resembles coarse crumbs. Stir in walnuts and vanilla. Press into a greased 13-in. x 9-in. baking dish. 1 cup flour
1/2 cup nuts, chopped
1/2 cup butter, melted
1 (8 ounce) package cream cheese, softened
1 cup powdered sugar
1 cup Cool Whip
6 cups rhubarb, cut up (fresh or frozen)
1 1/2 cups sugar
2 tablespoons minute tapioca
1/4 teaspoon nutmeg
1 cup Cool Whip (or whatever is left remaining from container used in second layer. Use a 12 or 13 oz container)
chopped nuts (optional)

Steps:

  • First layer combine all ingredients in first layer and pat into 9x13 inch pan. Bake at 350 for 15 minutes. Let cool.
  • For second layer beat cream cheese and powdered sugar together. Blend in 1 cup Cool Whip. Spread over cooled crust. Let this cool.
  • Third layer bring all ingredients in third layer to a boil and cook 5 minutes. Cool. Spread over second layer.

1 stick unsalted butter, melted, plus more, room temperature, for pan
18 graham-cracker sheets
2 cups plus 2 tablespoons sugar
16 ounces cream cheese, room temperature
1/2 cup sour cream, room temperature
1/2 teaspoon pure vanilla extract
Pinch of coarse salt
2 large eggs, room temperature, lightly beaten
1 1/2 pounds rhubarb stalks, 5 stalks trimmed and halved lengthwise, the rest chopped (1 3/4 cups)
6 ounces fresh raspberries
1 tablespoon fresh lemon juice
1 packet (1/4 ounce) unflavored powdered gelatin

Steps:

  • Preheat oven to 350 degrees. Butter a 9-by-13-inch baking pan; line with parchment, leaving a 2-inch overhang on long sides. Pulse graham crackers and 2 tablespoons sugar in a food processor until fine crumbs form. Transfer to a bowl; stir in melted butter.
  • Press crumbs into bottom of pan. Bake crust until firm, about 15 minutes. Let cool on a wire rack. Reduce oven to 325 degrees.

Cook, stirring occasionally, just until rhubarb is softened, about 10 minutes. Pass mixture through a fine sieve into a bowl, pressing gently on solids. Skim foam from top of liquid (you should have a little more than 1 cup; add water, if needed).
  • Bring 4 cups water and remaining 1 cup sugar to a boil in a large straight-sided skillet, stirring, until sugar is dissolved. Reduce heat to low; add rhubarb stalks (in 2 batches, if necessary). Simmer until slightly soft, 2 to 3 minutes. With 2 spatulas, carefully transfer stalks to a paper-towel-lined rimmed baking sheet; let drain.
  • Arrange 4 rhubarb strips in a parallel fashion on cooled cheesecake, spacing evenly. Cut remaining strips in half lengthwise and fit in empty spaces.
  • Sprinkle gelatin over 1/4 cup water; let soften 1 minute. Reheat raspberry syrup until simmering. Stir in gelatin until dissolved; gently pour over rhubarb strips. Refrigerate cake until set, at least 2 hours and preferably overnight.
  • Cut into pieces, using a sawing motion to slice through rhubarb layer; wipe knife between cuts.
