20 Ritz crackers (crushed into crumbs)
1 teaspoon baking powder
3 large egg whites
1 cup granulated sugar
1 teaspoon vanilla extract
1/2 cup pecan halves

  • Preheat the oven to 325 F. Butter a 9-inch pie plate.

Tips:

  • For a buttery and flaky crust, use high-quality butter and make sure it's cold before grating it.
  • To prevent the crust from becoming soggy, pre-bake it for 10-12 minutes before filling it.
  • Use light corn syrup instead of dark corn syrup for a lighter-colored pie filling.
  • To prevent the pie filling from curdling, temper the eggs by slowly whisking them with a small amount of the hot corn syrup mixture before adding them to the rest of the filling.
  • For a gooey, caramel-like filling, cook the pie until the center is just set but still slightly jiggly.
  • Let the pie cool completely before serving to allow the filling to set properly.
