Steps:
- Prepare the grill for direct cooking over medium heat (350° to 450°F) and preheat the grill pan. In a small bowl whisk the mustard, vinegar, salt, and pepper. Slowly drizzle and whisk in the oil until it is emulsified. Remove and discard the tough bottom of each asparagus spear by grasping at each end and bending it gently until it snaps at its natural point of tenderness, usually about two-thirds of the way down the spear. Spread the asparagus on a large plate. Drizzle with 2 tablespoons of the vinaigrette and turn the spears until they are evenly coated. In a medium bowl toss the tomatoes and bread cubes with 2 tablespoons of the vinaigrette. Brush the cooking grates clean. Spread the tomatoes and bread cubes in a single layer on the grill pan and lay the asparagus on the cooking grate. Grill over direct medium heat, with the lid closed as much as possible, until the asparagus is tender, the tomatoes begin to soften, and the bread cubes are toasted, turning often. The asparagus will take 6 to 8 minutes and the tomatoes and bread cubes will take 2 to 4 minutes. Arrange the asparagus on a platter and top with the tomatoes, croutons, feta, and chives. Serve with the remaining vinaigrette.

ROASTED ASPARAGUS & PEPPERS WITH FETA
This is from the Kraft Canada website, but don't let that discourage you. It's very good and it doesn't use any of that "kid" food that I normally think of when I hear the name "Kraft". We just used normal, unflavored feta cheese, but I'll bet it would be even better with the feta specified in the recipe.

Tips:
- Choose the right asparagus: Look for asparagus that are firm and have tightly closed tips. Avoid asparagus that are limp or have woody ends.
- Trim the asparagus: Cut off the woody ends of the asparagus, about 1-2 inches from the bottom. You can also peel the asparagus if desired, but this is not necessary.
- Roast the asparagus: Preheat your oven to 400°F (200°C). Toss the asparagus with olive oil, salt, and pepper. Spread the asparagus in a single layer on a baking sheet and roast for 10-12 minutes, or until tender.
- Make the dressing: While the asparagus is roasting, make the dressing. In a small bowl, whisk together the lemon juice, olive oil, honey, Dijon mustard, salt, and pepper.
- Assemble the salad: Once the asparagus is done roasting, let it cool slightly. Then, arrange the asparagus on a platter or in a bowl. Top with the feta cheese, walnuts, and dried cranberries. Drizzle the dressing over the salad and serve.
Conclusion:
This roasted asparagus salad with feta cheese is a delicious and healthy side dish or main course. It's easy to make and can be tailored to your own taste preferences. For a vegan version, omit the feta cheese. For a more flavorful salad, add some grilled chicken or shrimp.
