HEARTS OF ROMAINE SALAD WITH APPLES, CHEESE AND HAZELNUTS

Hearts of Romaine Salad With Apples, Cheese and Hazelnuts image

Make and share this Hearts of Romaine Salad With Apples, Cheese and Hazelnuts recipe from Food.com.

Provided by COOKGIRl

Categories     Fruit

Time 15m

Yield 4-6 serving(s)

Number Of Ingredients 11

5 -6 cups of hearts romaine leaves (the light green, crisp inner portion of a head of Romaine lettuce)
2 -3 flavorful apples, peeled and cored, then sliced as described below (such as Braeburn, Fuji, or Honeycrisp)
scant 1 cup of crumbled blue cheese
1 cup coarsely chopped toasted hazelnuts
1/2 cup red wine vinegar or 1/2 cup white wine vinegar
2 teaspoons balsamic vinegar
1 teaspoon sugar
1 teaspoon sweet honey mustard (I use Inglehoffer brand made here in Oregon)
1/4 teaspoon salt (reduced from 1/2 teaspoon)
1/2 teaspoon pure vanilla extract
2/3 cup grapeseed oil (in place of canola)

Steps:

  • Vinaigrette: In a container, whisk together the vinegars, sugar, sweet mustard, salt and vanilla. Whisk in the oil. Makes a generous 1 cup of vinaigrette.
  • Salad: Arrange the romaine on individual salad plates.
  • To prepare the peeled and cored apples, cut each half into 1/4-inch thick slices, then cut each slice into thirds.
  • Place the apples in a small bowl and toss with enough of the vinaigrette to coat the pieces. You can prepare the apple mixture up to an hour ahead. Important: If you coat the apples with the dressing any longer than that, they will absorb too much of the vinaigrette, which overwhelms the apple flavor.
  • Divide the apple mixture among the salads. Top each serving with a portion of the cheese and then a portion of the hazelnuts.
  • Drizzle an extra bit of the vinaigrette over the greens and around the edges of the salad. Serve.
  • Alternatively: Instead of hearts of Romaine lettuce, consider a mixture of baby spinach, hearts of Romaine and/or other mixed young greens. You could also substitute feta or white cheddar, aged gouda, etc. for the blue cheese.
  • Another serving option would be to assemble the entire salad on a large platter instead of individual salad plates.

ITALIAN ROMAINE SALAD

Italian Romaine Salad image

Looking for a salad to compliment your Italian dinner? Then check out this salad made with romaine lettuce, olives and artichoke tossed with prepared lemon vinaigrette - flavorful crunchy side dish ready in 20 minutes!

Provided by By Betty Crocker Kitchens

Categories     Side Dish

Time 20m

Yield 8

Number Of Ingredients 11

1 or 2 medium lemons
2 cloves garlic or 1/4 teaspoon garlic powder
2 tablespoons olive or vegetable oil
1/4 teaspoon salt
1/4 teaspoon pepper
1 large bunch or 2 small bunches romaine lettuce
1 small red onion
1 cup pitted kalamata olives or pitted jumbo ripe olives
1 jar (6 oz) marinated artichoke hearts, undrained
1/2 cup seasoned croutons
1/3 cup shredded Parmesan cheese

Steps:

  • Roll each lemon on the countertop with the palm of your hand, using gentle pressure (this will help release the juices). Cut 1 lemon in half; squeeze juice from each half. Use enough lemons until you have 1/4 cup lemon juice. Peel and finely chop the garlic. In a tightly covered jar or container, shake lemon juice, garlic, oil, salt and pepper.
  • Remove any limp outer leaves from the romaine and discard. Break remaining leaves off the core; rinse with cool water. Shake off excess water and blot to dry, or roll up the leaves in a clean kitchen towel or paper towel to dry. Tear the leaves into bite-size pieces. You will need about 10 cups of romaine pieces.
  • Peel the onion; slice onion and separate into rings.
  • In a large glass or plastic bowl, place the romaine, onion, olives and artichoke hearts (with liquid). Shake the vinaigrette again to mix ingredients. Pour vinaigrette over the salad ingredients, and toss with 2 large spoons or salad tongs until evenly coated.
  • Sprinkle the croutons and cheese over the salad. Serve immediately.

ROMAINE AND CUCUMBER SALAD WITH GARLIC VINAIGRETTE

Romaine and Cucumber Salad with Garlic Vinaigrette image

Categories     Salad     Garlic     Leafy Green     Side     No-Cook     Vegetarian     Quick & Easy     Wheat/Gluten-Free     Cucumber     Vegan     Raw     Gourmet

Yield Serves 8

Number Of Ingredients 5

2 tablespoons white wine vinegar
2 garlic cloves, minced and mashed to a paste with 1/2 teaspoon salt
1/3 cup olive oil
2 heads of romaine, torn into bite-size pieces, rinsed, and spun dry (about 14 cups)
2 cucumbers, peeled, halved lengthwise, seeded, and sliced crosswise

Steps:

  • In a large bowl whisk together the vinegar, the garlic paste, and pepper to taste, add the oil in a stream, whisking, and whisk the vinaigrette until it is emulsified. Add the romaine and the cucumbers and toss the salad well.

Tips:

  • Use a variety of lettuces for a more flavorful salad. Romaine, arugula, and red leaf lettuce are all good choices.
  • Wash your lettuce thoroughly before using it to remove any dirt or debris.
  • Make sure the lettuce is completely dry before adding it to the salad. Otherwise, the dressing will water down and the salad will be soggy.
  • To make the apple vinaigrette, use a variety of apples for a more complex flavor. Granny Smith, Honeycrisp, and Pink Lady apples are all good choices.
  • You can also add other ingredients to the vinaigrette, such as honey, Dijon mustard, or shallots.
  • To make the salad, simply toss the lettuce with the vinaigrette and serve.
  • You can also add other toppings to the salad, such as croutons, cheese, or nuts.

Conclusion:

Romaine salad with apple vinaigrette is a refreshing and flavorful salad that is perfect for a light lunch or dinner. It is also a great way to use up leftover lettuce. With a few simple ingredients, you can make a delicious and healthy salad that the whole family will enjoy.
