REAL TEXAS CHILI
This chili contains no onions, beans or tomatoes. It is even better the next day. Season to your tastes as it may be too spicy for you. You can also add pinto beans, sour cream and lime juice, if desired.

Steps:
- In a small dry skillet over low heat add the ancho peppers, oregano, paprika, coriander, cumin, and chili powder. Cook until they begin to smell, about 2 minutes. Put the spices into a spice mill or food processor and grind until they are powdered. Set aside.
- Heat a large heavy bottomed casserole over medium heat; add 3 tablespoons olive oil and the onions. Cook until the onions are soft and beginning to caramelize, about 10 minutes. Pat the beef dry and season it with salt and pepper. Add it to the pot and cook, stirring frequently, until it has browned on all sides, about 10 minutes. Add 2 tablespoons of the toasted spice mix, the garlic, chipotle, jalapeno, tomatoes, cinnamon stick, and sugar. Season with salt and stir well. Add some hot water until the meat is just covered with liquid. Return to the boil, reduce to a simmer, cover, and cook for 1 1/2 hours. Remove the meat and shred it with a fork. Return it to the pot, stir in the masa harina, and cook for another 10 minutes, uncovered, to thicken. Taste and adjust seasoning. Serve with the queso fresco, cilantro, and lime for garnish.
RUDY'S AT THE LOOP TEXAS HOT SAUCE
This is a copykat recipe I found on another internet site. I am not a hot dog fan but with Hoffman's German Franks and this hot sauce, I actually like them. I had tried making a copy of Rudy's sauce on my own, but this recipe tastes exactly the same as the one found at Rudy's on the shore of Lake Ontario just off the Oswego college campus.

Steps:
- Simmer onion and meat in a sauce pan until meat is in fine pieces.
- Drain, transfer mixture to a food processor and pulse until finely ground.
- Return meat mixture to pan, add remaining ingredients and simmer an additional 2 hours.
- I always make a double batch and freeze some. This always goes in the camper with us.
RUDY'S FAVORITE TURKEY CHILI
Freezes nicely, but doesn't last long. We buy the large packages of ground turkey at a warehouse club and make up a big batch, to save time and money. Garlic is thought to help boost the immune system, so don't be shy with it. The cloves should be fresh and firm, and when mashed (with the side of the knife) and chopped they should smell sweet and not too pungent.

Steps:
- Heat a large soup pot on medium heat. Add oil, making sure the pot is not so hot that the oil smokes. Saute the onions and peppers for a minute or two, then add the minced garlic. Soften the garlic but don't let it burn.
- Add ground turkey to the pot. Stir frequently to brown the turkey throughout. When the meat is no longer pink, carefully ladle off as much of the fat as possible. Dispose of the discarded fat by placing it in an unwanted container (such as an empty can) and freeze it - don't pour it down the drain.
- Add tomatoes with their juices. Add remaining ingredients and stir gently. Simmer, uncovered, at least 20 minutes. Taste for seasonings, and adjust if necessary. Serve with a dollop of sour cream and a sprig of fresh cilantro.
- If your family prefers a mildly spiced chili, omit the chipotle. For a spicier chili, add your favorite chili sauce (Tabasco, Cholula, etc.) at the table.

Tips:
- Use high-quality chili powder. This is the backbone of your chili, so don't skimp on it. Look for a chili powder that is fresh and has a deep, rich red color.
- Add a variety of chili peppers. This will give your chili a complex flavor and heat level. Some good options include ancho, pasilla, and chipotle peppers.
- Use fresh, ripe tomatoes. This will add a bright, acidic flavor to your chili. If you can't find fresh tomatoes, you can use canned tomatoes, but be sure to drain them well before adding them to the pot.
- Brown the meat before adding it to the chili. This will help to develop the flavor and prevent the meat from becoming dry and tough.
- Simmer the chili for at least 30 minutes. This will allow the flavors to develop and meld together.
- Season the chili to taste. This may include adding more chili powder, salt, or cumin. You can also add a bit of sugar to balance out the acidity of the tomatoes.
- Serve the chili with your favorite toppings. Some popular options include shredded cheese, sour cream, and chopped onions.
Conclusion:
Rudy's Texas Chili is a delicious and easy-to-make chili that is perfect for a cold winter day. With its rich, flavorful broth, tender meat, and spicy kick, this chili is sure to be a hit with everyone who tries it. So next time you're looking for a hearty and satisfying meal, give Rudy's Texas Chili a try.
