BASMATI RICE WITH FRIED CASHEWS AND RAISINS

Basmati Rice with Fried Cashews and Raisins image

This recipe was inspired by a New Year's Day feast I was invited to starring a huge chicken biryani. I helped the host with the final touches of the meal, including frying some nuts and raisins as a topping. I loved the flavor and texture they brought to the meal. While this recipe is certainly not biryani, the toasted toppings mixed into a lightly spiced rice, takes me back to that special day.

SAFFRON RICE WITH CASHEWS

Saffron Rice With Cashews image

The original recipe called for chopped pistachio nuts, but when my mom was teaching me to cook, she only had cashews. I was never a cashew fan until I tasted this dish. The cashews become rather soft and separate into halves. The whole dish has an aromatic and softly sweet flavor. I've used cashews ever since, not even bothering with pistachios!

Tips:

  • Use high-quality ingredients: The better the quality of your ingredients, the better your saffron rice will be. Look for long-grain basmati rice, premium saffron, and plump raisins.
  • Soak the rice: Soaking the rice before cooking helps to remove the starch and results in fluffier rice.
  • Toast the nuts: Toasting the nuts before adding them to the rice gives them a richer flavor.
  • Use a heavy-bottomed pot: A heavy-bottomed pot will help to distribute the heat evenly and prevent the rice from burning.
  • Don't stir the rice too much: Stirring the rice too much can break the grains and make the rice mushy.
  • Let the rice rest before serving: Letting the rice rest for a few minutes before serving allows the flavors to meld and the rice to absorb all the delicious juices.

Conclusion:

Saffron rice with raisins and cashews is a delicious and flavorful dish that is perfect for a special occasion or a weeknight meal. With its vibrant color and aromatic flavor, this dish is sure to impress your family and friends.
