BUTTERMILK GREEN GODDESS SLAW

Buttermilk Green Goddess Slaw image

This herby coleslaw variation was adapted from "The Animal Farm Buttermilk Cookbook" (Andrews McMeel Publishing, 2013) by Diane St. Clair. In it, a tangy buttermilk- and avocado-spiked green goddess dressing takes the place of the usual mayonnaise mix, for a slaw that's both lighter and fresher tasting. Like most coleslaws, it gets better as it sits so, if you have time, plan to make it a few hours ahead. Save any extra dressing to use as a dip for cut vegetables or for other salads. It will keep for up to two days in the fridge.

1 garlic clove, peeled and smashed
1/4 cup chopped parsley leaves and tender stems
3 tablespoons chopped chives
2 tablespoons chopped tarragon leaves
2 tablespoons extra-virgin olive oil
1 tablespoon chopped basil leaves
Salt and freshly ground black pepper, to taste
4 cups thinly sliced green cabbage (about 1/2 a small head)

Tips:

  • Choose the freshest ingredients: Use ripe, in-season vegetables and herbs for the best flavor.
  • Make sure the buttermilk is fresh: Buttermilk that is too old will have a sour taste and ruin the dressing.
  • Use a good quality olive oil: Extra virgin olive oil is the best choice for this dressing, as it has a fruity flavor that complements the other ingredients.
  • Season the dressing to taste: Taste the dressing and add salt and pepper until it is perfectly seasoned.
  • Let the salad rest: After dressing the salad, let it rest for a few minutes before serving. This will allow the flavors to meld together.

Conclusion:

Buttermilk basil dressing is a versatile dressing that can be used on a variety of salads. It is light and refreshing, with a slightly tangy and creamy flavor. The dressing is also very easy to make, and it can be tailored to your own personal taste. Whether you are looking for a simple dressing for a weekday salad or a more complex dressing for a special occasion, buttermilk basil dressing is a great option.
