6 slices lemon
¼ cup fresh rosemary
¼ cup fresh thyme
4 (4 ounce) fillets salmon
⅓ cup butter
3 tablespoons olive oil
4 cloves garlic, diced
½ cup diced onion
1 ¼ cups heavy cream
1 tablespoon chopped fresh mint leaves

Steps:

  • Tear a 2 foot piece of parchment paper and place lemon slices in the middle, lengthwise. Place fresh rosemary and thyme on top of lemon slices. Lay salmon filets on top of herbs. Divide 1 tablespoon of butter among each filet. Fold and seal the parchment paper being careful that the lemon slices and herbs stay on the bottom. Wrap another piece of parchment paper tightly around the fish.
  • Place fish packet into a double boiler for 25 to 30 minutes. While fish is cooking, make the sauce.
  • In a saucepan, combine the remaining 1/4 cup of butter, olive oil, garlic and onion; cook and stir on medium heat for 15 minutes, until onions are transparent. Do not over brown. Pour in heavy cream and cook until it begins to thicken. Remove from the heat.
  • Pour the hot butter mixture into a blender. Add fresh mint and blend on high for 10 to 15 seconds. Pour back into the saucepan to warm and thicken for 2 to 3 minutes, stirring constantly. Do not let it sit too long, or it will begin to break down.
  • When fish is done, remove from parchment paper and pace on a warm plate. Spoon sauce over top of fish.

1 tbsp olive oil
1 leek , thinly sliced
250ml chicken or fish stock
100g crème fraîche
140g frozen peas
140g frozen broad beans
4 skinless salmon fillets
small bunch chives , snipped
mash , to serve

Steps:

  • Heat the oil in a large, deep frying pan with a lid. Cook the leek for 5-10 mins until soft but not coloured, then pour in the stock. Simmer for a few mins until reduced slightly then add the crème fraîche and season. Cook for 1 min more.
  • Tip in the peas and beans, nestle in the salmon fillets, then turn down to a simmer and cover. Cook for 12-15 mins, depending on the thickness of the salmon, until cooked through. Sprinkle on the chives and serve with mashed potato, if you like.

1/4 cup balsamic vinegar
1/4 teaspoon Dijon mustard

2 lbs salmon fillets (cut into 8 fillet slices)
2 tablespoons olive oil
2 cups grapes, washed and sliced
8 cups baby greens, washed and dried
1 teaspoon sesame seeds, toasted
2 scallions, sliced

Steps:

  • Place all marinade ingredients in large zip lock bag and mix.
  • Add fillets and toss to coat. Place in refrigerator for 1 hour.

4 salmon fillets
salt and pepper
3 teaspoons olive oil
parsley (to garnish)
1 cup creme fraiche
1/4 cup mayonnaise
1/2 teaspoon salt
1/4 teaspoon pepper
2 tablespoons fresh dill (or 1/2 tsp. dried)
1 tablespoon capers, drained
1 teaspoon lemon juice
1 teaspoon prepared horseradish
1 pinch red pepper flakes (optional)
2 tablespoons butter
4 cups napa cabbage, sliced thinly
salt and pepper
4 tablespoons green onions, sliced
2 -3 garlic cloves, minced (or add more if you love garlic)
1 -3 tablespoon water, if needed (or broth)

Steps:

  • To make sauce:.
  • Combine creme fraiche, mayonnaise, salt and pepper, dill, capers, lemon juice, horseradish and red pepper flakes, if using. Set aside.
  • To cook greens:.
  • In a large skillet, melt the butter over medium high heat.Stir in the napa cabbage, green onions, and garlic. Saute 5 minutes, then turn down heat to medium, add water or broth and cover. Cook about 5 more minutes, till desirerd tenderness. Keep warm and set aside.
  • To cook salmon:.
  • Heat oil in large skillet over medium high heat(I use same pan greens were cooked in or cook in separate skillet while greens are cooking). When hot, add salmon, skin side up(if it has skin on it). Sear until well browned, about 4-6 minutes. Turn the salmon over and sear other side until just cooked through, about 3-5 more minutes.
  • To serve:.
  • Divide the cooked napa cabbage evenly on 4 serving plates. Spread out a little to make a "bed". Place salmon on top of greens. Spoon sauce over top of salmon. Garnish with a little parsley or fresh dill, if desired. Enjoy!

1 1/2 tablespoons unsalted butter
2 cloves garlic, minced
1 medium shallot, diced
2 tablespoons all-purpose flour
1/4 cup dry white wine*
3/4 cup chicken stock
3/4 cup half and half
3 cups baby spinach
2 tablespoons chopped fresh dill
1 lemon, cut in wedges

  • Using paper towels, pat both sides of the salmon fillets dry; season with 1 teaspoon salt and 1/2 teaspoon pepper. Melt butter in a large skillet over medium heat. Add salmon fillets to the skillet, skin side up, and cook until golden brown and a crust has formed, about 4-5 minutes. Using a fish turner, flip, and cook for an additional 4-5 minutes, or until desired doneness. Remove and keep warm. Juice of 1 lemon
2 teaspoons coarse salt

Freshly ground black pepper to taste
2 tablespoons fresh cilantro

Steps:

  • Wash and trim the arugula and dry; wash, trim and separate leaves of radicchio and dry.
  • Peel jicama; grate coarsely.
  • Peel mango; cut into cubes.
  • Wash and dry salmon, and use 1 teaspoon of the olive oil to rub on both sides. Prepare stove-top grill, and cook salmon over medium-high heat, following the Canadian rule: measure at thickest part, and cook 8 to 10 minutes to the inch, turning once.

4 five-ounce fresh salmon filets, all skin and bones removed
1/2 cup Dijon mustard
1/2 cup extra-virgin olive oil plus, more for greens
4 to 6 cups mixed greens such as endive, lamb's lettuce, and Bibb

Steps:

  • Combine the liquids in a large pot or skillet. Add 2 tarragon stems (leaves reserved), bay leaves, peppercorns, and carrot. Bring to a boil. Cook until flavorful, 15 to 20 minutes. Reduce to a simmer and add the salmon filets. Simmer, covered, for 10 to 12 minutes. Turn off the heat and allow the salmon to cool in the bouillon. When completely cold, remove the salmon from the bouillon. Drain on paper towels to dry completely.
