Tips:

  • For a creamier fudge, use a food processor to blend the sweet potatoes until very smooth.
  • If you don't have a food processor, you can mash the sweet potatoes by hand, but make sure they are very smooth.
  • Be careful not to overcook the sweet potatoes, or they will become dry and crumbly.
  • If you are using a candy thermometer, the fudge is ready when it reaches 235 degrees Fahrenheit.
  • If you don't have a candy thermometer, you can test the fudge by dropping a small amount into a glass of cold water. If the fudge forms a soft ball, it is ready.
  • Stir the fudge constantly while it is cooking, to prevent it from burning.
  • Once the fudge is cooked, pour it into a greased 8x8 inch pan and let it cool completely.
  • Before cutting the fudge, chill it in the refrigerator for at least 2 hours.
  • Store the fudge in an airtight container in the refrigerator for up to 2 weeks.
