¼ teaspoon ground black pepper
1 (5 pound) boneless pork loin roast

SAUERKRAUT AND APPLES

Sauerkraut and Apples image

In the Chesapeake, seafood often finds its way onto the Thanksgiving menu. But in Baltimore, which has a strong eastern European and German immigrant history, the holiday table demands something else. "The absence of sauerkraut when turkey is present, Thanksgiving included, is unthinkable, comparable to potatoes without gravy or crisp French fries without ketchup," wrote John Shields, the chef and owner of Gertrude's restaurant in Baltimore, in his cookbook "Chesapeake Bay Cooking." (Sauerkraut is a mainstay well beyond Thanksgiving; Gertrude's hosts an annual Krautfest in January.) Traditionally, homemakers fermented the cabbage in earthenware crocks in their cellars, but these days the fresh stuff is available to buy. On Thanksgiving, it's often simply served as a side, or incorporated into dishes like this, in which the sauerkraut is braised in beer with bacon and apples.

Categories     side dish

Time 55m

Yield 8 servings

Number Of Ingredients 8

6 tablespoons butter
4 slices bacon, cut into 1/2-inch pieces
1 small onion, thinly sliced
3 tart apples, such as Stayman, Pippin, Granny Smith or Jonagold, peeled, cored, and thinly sliced
2 pounds sauerkraut, drained and rinsed
1 bottle (12 ounces) beer (you may substitute apple cider)
Black pepper, to taste
1/2 teaspoon caraway seeds

Steps:

  • Melt butter in a large heavy pot over medium-high heat. Add bacon and cook, stirring often, until fat has started to render, about 5 minutes.
  • Toss onion and apples in the fat and cook, stirring occasionally, until onions begin to soften, about 3 minutes. Stir in sauerkraut.
  • Add beer and season with pepper and caraway seeds. Bring mixture to a boil, then cover the pot. Reduce heat so mixture is just simmering and cook for 45 minutes. Or transfer the covered pot to a 350-degree oven and bake for 1 hour. Stir and serve hot.

COUNTRY PORK RIBS WITH APPLES AND SAUERKRAUT RECIPE - (4.7/5)

Country Pork Ribs with Apples and Sauerkraut Recipe - (4.7/5) image

Provided by WheretheMagicHappens

Number Of Ingredients 12

4 pounds Boneless Pork Ribs
1 cup Flour
2-3 tablespoons Vegetable Oil
Salt and Pepper, about a teaspoon each
1 32 ounce jar Steinfeld's Home Style Sauerkraut, undrained (or equal amount of brand available in your area)
3 Apples, peeled and cubed
1 20 ounce can Crushed Pineapple, undrained
1 medium Onion, peeled and sliced
3-5 cloves Garlic, minced
1 tablespoon Caraway Seed
2-3 Bay Leaves
Salt and pepper to taste

Steps:

  • Remove the extra hunks of fat from the pork ribs. Put flour, salt and pepper iinto a gallon sized ziploc bag. Add the pork ribs 2 or 3 at a time, and shake until well coated. Add the oil to a dutch oven over medium-high heat. Add the pork and brown on all sides, adding a little more oil if needed. Remove pork from your pan. Add more oil if needed. Peel and core your apples and cut into chunks. Peel and slice your onions, cut in half once then slice into strips. Peel and mince your garlic. Over medium heat, add onions to the pan and stir them around. At this point you can turn the heat down low, cover them with a lid. Add the minced garlic after a few minutes, and set the timer for no more than 5 minutes or until they are translucent. Don't let the garlic burn! Add the sauerkraut, apples, pineapple, bay leaves and caraway seeds. Stir them around together until well mixed. Add the pork and lay them on top of the liquid mixture. Cover and simmer for about 3 hours. Check the hear in about 20 minutes to make sure it is simmering, not boiling. If your liquid evaporates you can add a little water, apple or pineapple juice. You want it to have liquid throughout the cooking time and until you serve. I give it a stir every hour or so to make sure it has enough liquid and is still happily simmering away. Add salt and pepper to suit your taste. Notes: We tend to use a ladle to fill our bowls right from the dutch oven when it's just the two of us! We like to eat it like a bowl of soup. When I serve it to guests, I remove the pork and place it on a warm serving plate and place the sauerkraut mixture around the pork. Add a nice salad and a hard roll for sopping up the liquid and you have yourself a meal. I have served this with boiled potatoes but they aren't necessary. I usually add 2 jars of sauerkraut because we like a higher ratio of sauerkraut to meat. This is a great recipe to make the day before. The flavors blend together even more by the next day. Another benefit to makeing it the day before: you can take the extra fat off easier as it is sitting on top when cold. You can remove it with a fork or a spatula.

Tips:

  • Choose the right sauerkraut: Look for sauerkraut that is made with fresh, shredded cabbage and has a tangy, sour flavor.
  • Rinse the sauerkraut: Before using, rinse the sauerkraut thoroughly with cold water to remove any excess salt.
  • Use a variety of apples: Different types of apples will give your dish different flavors and textures. Try using a combination of sweet, tart, and crisp apples.
  • Add other ingredients to taste: Feel free to add other ingredients to your sauerkraut and apples dish, such as onions, carrots, celery, or caraway seeds.
  • Cook the sauerkraut and apples slowly: This will help to develop the flavors and tenderize the cabbage.
  • Serve sauerkraut and apples with your favorite sides: Sauerkraut and apples can be served with a variety of sides, such as mashed potatoes, roasted chicken, or pork chops.

Conclusion:

Sauerkraut and apples is a classic German dish that is both delicious and nutritious. It is a great way to use up leftover sauerkraut, and it can be served as a side dish or a main course. With its tangy, sour flavor and crisp texture, sauerkraut and apples is a dish that everyone will enjoy. So next time you are looking for a new and exciting way to cook sauerkraut, give this recipe a try. You won't be disappointed!
