  • Thinly slice leeks. Use white and light green parts of leeks. Separate rings and place in colander. Rinse well and drain well. Try to get leeks as dry as possible.
  • Heat olive oil and butter on med-high in frying pan large enough for all the leeks. Remember that they will wilt down!

2 teaspoons margarine (divided) or 2 teaspoons butter, preferably unsalted (divided)
2 large granny smith apples, cored and thinly sliced

  • Split the leeks in half lengthwise and trim the bottoms, leaving a little of the root end intact so that they stay together. Wash well several times and dry. Cut lengthwise into thin strips, about 2 inches long.

1 cup fat-free buttermilk, slightly warmed
sea salt & freshly ground black pepper

  • Boil potatoes in salted water until fork tender.
  • Meanwhile, saute leeks in olive oil over medium heat in a nonstick pan until slightly golden, about 4 minutes. Add rosemary and stir for an additional minute or so - until you can smell it).

2 or 3 red ripe tomatoes, about 1 1/2 pounds
