SHRIMP MY WAY

Yield Serves 4

Number Of Ingredients 9

1/4 extra-virgin olive oil
3 or 4 large cloves garlic, cut into thin slivers
2 teaspoons ground cumin
2 teaspoons spicy paprika
16 large shrimp, peeled
Coarse salt
Cayenne pepper, to taste
1/4 cup minced parsley leaves
1 tablespoon freshly squeezed lemon juice, or sherry vinegar, to taste

Steps:

  • Combine the oil and garlic in a skillet no larger than 10 inches across. Turn the heat to medium, and cook until the garlic begins to sizzle, then turn the heat to medium-low. When the garlic is blond, stir in cumin and paprika. Add the shrimp, and raise the heat to high.
  • Cook, stirring occasionally and sprinkling with salt and cayenne, until the shrimp are all pink, about 4 minutes. Remove from heat, and add most of the parsley and the lemon juice. Taste and adjust seasoning. Serve garnished with the remaining parsley.

MARK BITTMAN'S SHRIMP IN GREEN SAUCE

Mark Bittman's Shrimp In Green Sauce image

Green sauce means different things to different cooks, but I like the Iberian interpretation best. It draws its color from parsley and its impact from chilies, scallions, and, mostly, garlic. I find it difficult to use too much garlic here, and have never really reached the outer limit; my recipe calls for six cloves, but twice that amount is not unreasonable. Shrimp is the perfect candidate for this green sauce: it can withstand high heat, it gives off some juices while it cooks, and its pink hue is absolutely gorgeous when surrounded by the flecks of green. This dish won't take you much more than half an hour. And although it's a perfect week-night meal, divided into eight it makes an impressive starter for a dinner party.

1/3 cup extra virgin olive oil
6 scallions, trimmed and chopped

Salt and pepper to taste
4 dried chilies or a few pinches of crushed red chili flakes, or to taste
1/3 cup stock (shrimp, fish or chicken) or white wine or water

  • Heat oven to 500 degrees. Combine garlic and oil in a small food processor and blend until smooth, scraping down sides as necessary. Add scallions and parsley and pulse until mixture is minced. Toss with shrimp, salt, pepper and chilies.

SHRIMP DE JONGHE (DEREK'S WAY)

Shrimp De Jonghe (Derek's Way) image

I got the recipe from a cookbook years ago (I think it was a Betty Crocker Cookbook) and made several changes over time. This is how I make it today after years of perfecting the recipe.

Categories     High Protein

Time 1h

Yield 6-8 individual casseroles, 6-8 serving(s)

Number Of Ingredients 13

2 lbs shrimp (peeled and deveined)
1/2 cup butter
1 cup plain breadcrumbs
4 garlic cloves
1 tablespoon finely chopped onion
1 tablespoon chopped fresh parsley
1/2 teaspoon tarragon (dried)
1/2 teaspoon salt
1/4 teaspoon white pepper
1/4 teaspoon ground nutmeg
1/4 teaspoon ground mace
1/4 teaspoon thyme (dried)
1 cup chicken broth

Steps:

  • Peel and slice the garlic cloves. Melt half the butter in a large skillet. Add the shrimp and the garlic. Cook the shrimp until they start to turn pink on both sides. Don't worry if they're not completely cooked, they're going in the oven later. Remove the shrimp to about 6 or 8 small individual casserole dishes. Try to leave the garlic and butter in the pan.
  • Add the rest of the butter to the pan you just cooked the shrimp in, and continue cooking until the butter is clarified and the garlic is browned.
  • Strain the clarified garlic butter into a bowl or I use a 2 cup measuring cup. It makes it easy to pour.
  • Mix 1/4 cup of the clarified butter with the bread crumbs and set aside.
  • Add the remaining ingredients to the rest of the clarified butter. Stir and pour an even ammount into each shrimp dish. I try to stir as I pour to make sure every dish gets the same ammount of everything.
  • Flake bread crumbs over shrimp. At this point they can be refrigerated and baked later.
  • Bake 10-12 minutes at 400°F.
  • Bread crumbs should be browned on top.

THE BEST GARLIC SHRIMP IN THE WHOLE WIDE WORLD

The Best Garlic Shrimp in the Whole Wide World image

Yes, almost the same as my other recipe but 100% better! A little change went a long way. It is the best, I promise! I have NEVER in my life had better shrimp. My whole family was in heaven. OK, enough tooting my own horn!

Time 25m

Yield 6 serving(s)

Number Of Ingredients 8

25 -30 large shrimp, raw and peeled (or jumbo)
3 tablespoons chopped garlic, fresh (see tip) or 3 tablespoons from a jars (see tip)
1 cup fresh parsley, chopped
2 teaspoons paprika
fresh ground sea salt, to taste (see tip)
fresh ground pepper, to taste
1/2 cup olive oil
2 tablespoons butter

Steps:

  • In a large Ziplock freezer bag, mix everything except the butter and swish it around good to coat all of the shrimp. Or, mix everything in a large bowl and cover TIGHTLY with Saran wrap.
  • Refrigerate for 1 hour.
  • Preheat large heavy bottom pan with the butter in it on medium. Toss shrimp around for about 10 minutes until pink and lightly browned.
  • TIPS: Do not substitute with garlic powder OR dried parsley! Sea salt is stronger than table salt so use less than normal. Table salt can be substituted.
  • Serve with steak or pasta with a white sauce.
  • I KNOW THIS IS VERY SIMILAR TO MY OTHER SHRIMP RECIPE, BUT I MADE IT THIS WAY TONIGHT AND IT WAS SO UNBELIEVABLE THAT I HAD TO POST IT! EVEN BETTER THAN MY OTHER SHRIMP RECIPE!
