2 (14.75 ounce) cans salmon
½ red bell pepper, minced
¼ cup minced sweet onion
¾ cup bread crumbs
2 eggs, slightly beaten
1 tablespoon soy sauce
2 teaspoons Sriracha hot sauce
2 teaspoons ground ginger
1 teaspoon sesame oil
1 teaspoon dried mustard powder
1 teaspoon garlic powder
1 tablespoon vegetable oil
1 teaspoon sesame oil

Steps:

  • Place a colander on top of a bowl; add salmon to the colander and separate fish a bit to allow it to drain. Let stand until well drained, about 10 minutes. Discard juice and transfer salmon to a large bowl.
  • Mix bell pepper and onion into the salmon. Add bread crumbs, eggs, soy sauce, Sriracha, ginger, 1 teaspoon sesame oil, mustard powder, and garlic powder; mix to combine. Form into 5 patties. Place patties on a cookie sheet and cover with plastic wrap. Chill in the refrigerator, 1 hour to overnight.
  • Heat vegetable oil and 1 teaspoon sesame oil in a 12-inch nonstick skillet over medium-high heat. Gently place burgers into the skillet, reduce heat to medium, and cook, turning just once, until well browned, 7 to 9 minutes per side. Place cooked burgers on a serving platter.

1 egg
1/2 cup dry breadcrumbs
1/4 cup salsa or 1/4 cup mango chutney
1 green onion, chopped

Steps:

  • Place about 3/4 of the beans into a large bowl and mash with a fork.
  • Stir in remaining ingredients and mix until well combined.
  • Shape into four 1/2 inch thick patties (May wrap in plastic and refrigerate up to 24 hours at this point.
  • Heat 2 tsp vegetable oil in nonstick skillet over medium heat (or spray with nonstick spray such as Pam) and cook patties, turning once, for 10 to 12 minutes or until golden. **If cooking on bbq I use my vegetable grill so that pieces don't fall into bbq.**.

1/4 cup sunflower seeds
2 cups cooked or canned red or pink beans, no salt added or low sodium, drained and rinsed
1/2 cup minced onion
2 tablespoons low sodium ketchup

Steps:

  • Preheat the oven to 350 degrees. Lightly oil a baking sheet with a little olive oil on a paper towel. Chop the sunflower seeds in a food processor or with a hand chopper. Mash the beans in the food processor or with a potato masher and mix with the sunflower seeds. Mix in the remaining ingredients and form into six patties. Place the patties on the baking sheet and bake for 25 minutes. Remove from the oven and let cool slightly, until you can pick up each patty and compress it firmly in your hands to re-form the burger. Return the patties to the baking sheet, bottom side up, and bake for another 10 minutes. Note: If desired, these may be done on a grill.
