Number Of Ingredients 13

3 cups coarse stone-ground yellow cornmeal
1/2 cup all-purpose flour
1 tablespoon ground cinnamon
2 teaspoons salt
8 cups half-and-half
1/2 cup maple syrup
1/2 cup molasses
1/2 cup packed light brown sugar
4 tablespoons (1/2 stick) unsalted butter, cut into pieces, plus for greasing baking dish
1 orange, zested and juiced
Whipped Cream, recipe follows
2 cups heavy whipping cream
1/3 cup confectioners' sugar

Steps:

  • Preheat the oven to 325 degrees F; position a rack in the center of the oven. Butter a 9-by-13-inch baking dish.

  • In a large saucepan over medium-high heat, whisk together the half-and-half, maple syrup, molasses and brown sugar. FARMHOUSE PUDDING

Farmhouse Pudding image

This layered and steamed meat pudding is also known as Wellingborough Hough and Dough Cake - 'hough' being another name for shin of beef.

Provided by MarieRynr

Categories     Meat

Time 1h25m

Yield 4-6 serving(s)

Number Of Ingredients 9

1 lb shin beef, finely diced
2 medium onions, peeled and chopped
1 -2 tablespoon cooking oil
3 medium carrots, peeled and grated
1 tablespoon chopped fresh parsley
1 ounce flour
3/4 pint beef stock
salt and black pepper
1 lb prepared suet pastry dough (see my recipe)

Steps:

  • Mix the meat and onion together. Heat the oil in a frying pan and fry the meat mixture until brown, then stir in the carrots, parsley and flour.
  • Gradually add the stock and cook, stirring, until the mixture is thick and boiling. Season to taste.
  • Grease a 2 pint pudding basin. Roll out the pastry on a lightly floured surface and cut a circle that will fit the bottom of the basin. Place a layer of meat ove this, then add another circle of pastry, continuing to fill the basin with alternate layers, finishing with a circle of pastry.
  • Cover the pudding with greaseproof paper and kitchen foil and seal. Put in a large pot and fill pot with hot water to come up half way up the sides. Put the cover on the pot and steam the pudding for 1 to 1 1/2 hours, topping up the water when necessary.
  • Serve direct from the basin with boiled potatoes and a green vegetable.

INSTANT POT RICE PUDDING

Instant Pot Rice Pudding image

Rice pudding prepared in an electric pressure cooker is both speedy and simple - the kind of thing you can whip up in minutes in between other kitchen tasks. This version calls for short-grain rice, which turns plump and pleasingly sticky as it cooks in a combination of milk and heavy cream. Adding a vanilla bean lends deeply aromatic notes, but if you don't have one, just stir 1 tablespoon vanilla extract into the pudding along with the egg yolks. Or skip the vanilla and add a teaspoon of whole cardamom pods to the pot to round out the spicy flavor of the cinnamon. Whipped cream might be overkill on a pudding this rich, but only in the very best way.

Categories     custards and puddings, dessert

Time 30m

Yield 4 to 6 servings

Number Of Ingredients 12

3/4 cup arborio or other short-grain rice
2 1/2 cups whole milk
1/3 cup granulated sugar
1 (2-inch) cinnamon stick
1 (4-inch) strip orange or lemon zest, peeled with a vegetable peeler (optional)
1/2 vanilla bean, halved lengthwise, seeds scraped with the tip of a paring knife, or 1 tablespoon vanilla extract
Large pinch of fine sea salt
1/2 cup heavy cream
2 egg yolks
1/2 cup raisins (optional)
Ground cinnamon or cardamom, for serving (optional)
Whipped cream, for serving (optional)

Steps:

  • In the pressure cooker pot, stir together the rice, milk, sugar, cinnamon stick, orange zest (if using), vanilla bean and seeds, and salt.
  • Lock the lid into place and cook on high pressure for 10 minutes. Let the pressure release naturally for 10 minutes, then manually release the remaining pressure.
  • Open the lid and discard the cinnamon stick, orange zest and vanilla bean.
  • In a small bowl, whisk together the cream and yolks. Whisk into the rice and continue to stir until slightly thickened, about 2 minutes. (It will still look soupy at this point.) The residual heat of the rice will cook the yolks, and chilling will thicken the pudding. Stir in the raisins, if using.
  • Spoon the pudding into serving bowls, then cover with plastic wrap and chill for at least 2 hours. Serve with a sprinkle of ground cinnamon or cardamom and whipped cream, if you'd like.

SIMPLE FARMHOUSE RICE PUDDING

Simple Farmhouse Rice Pudding image

I substituted milk with Cream because I prefer a creamier pudding. pinched from www.facebook.com

Provided by Jennifer Sullivan

Categories     Puddings

Number Of Ingredients 6

2 c cooked rice
1/2 c sugar
2 eggs, slightly beaten
2 c milk
1/2 tsp vanilla
1/2 tsp cinnamon (optional)

Steps:

  • 1. Place rice in bowl, add all ingredients, and stir to mix. Pour into greased baking dish or pan. Bake about 25 minutes in a 350 degree oven. Can sprinkle with cinnamon

Tips:

- Use fresh ingredients whenever possible, as they will yield the best flavor and texture. - Pay attention to the temperature of your ingredients. For example, cold butter will make a flakier pie crust, while room-temperature butter will make a richer, more tender crust. - Don't overmix your batter or dough. Overmixing can lead to a tough, dense texture. - Bake your dishes in a preheated oven. This will help to ensure that they cook evenly. - Let your dishes cool completely before serving. This will help the flavors to develop and will also make them easier to handle.

Conclusion:

The recipes in this article are a great place to start for anyone who is looking to create delicious, home-cooked meals. With a little practice, you'll be able to master these recipes and create your own variations that your family and friends will love. So get in the kitchen and start cooking!
