SIX-BEAN CASSEROLE

Six-Bean Casserole image

I like starting out with recipe ideas and adding ingredients to make them mine. This bean dish, passed to our family by a friend, got a double-dash of barbecue sauce flavor from me. I have all sons-no daughters. But I'm not afraid of losing our family recipes. My boys love to help cook!

BEAN MEDLEY SALAD

Bean Medley Salad image

A nice, tangy bean salad great for picnics. I never add salt to anything I make, so add it if you like it. Lasts about 5 days in the fridge.

Provided by C and Ds Mommy

Categories     Beans

Time 10m

Yield 6 serving(s)

Number Of Ingredients 10

1 (540 ml) can six- bean medley (or 5 bean medley if that's all you can find)
1 (340 ml) can peaches and cream corn (or sweet corn works)
1 small red onion, minced
3 green onions, chopped
3 tablespoons fresh parsley, chopped (can also use dried parsley)
3 tablespoons olive oil
3 tablespoons red wine vinegar
1 tablespoon white vinegar
1/2-1 teaspoon sugar
1 pinch fresh ground black pepper

Steps:

  • Open can of beans and pour into a strainer. Rinse off the beans. Pour into a large mixing bowl.
  • Repeat first step with the corn, and add to the beans.
  • Add remaining ingredients and mix together.
  • This recipe works best if allowed to sit for 24 hours for the flavours to blend.

Tips:

  • Use a variety of beans. This will give your salad a more interesting flavor and texture. Some good options include kidney beans, black beans, chickpeas, and lentils.
  • Cook the beans properly. Beans should be cooked until they are tender but still hold their shape. If you are using canned beans, rinse them well before adding them to the salad.
  • Add vegetables and herbs. Vegetables and herbs will add flavor, color, and crunch to your salad. Some good options include diced tomatoes, red onion, cucumber, bell peppers, and parsley.
  • Use a flavorful dressing. A good dressing will help to bring all of the flavors of the salad together. Some good options include a vinaigrette, olive oil and lemon juice, or a yogurt-based dressing.
  • Chill the salad before serving. This will help to make the flavors meld together and will also make the salad more refreshing.

Conclusion:

Six-bean salad is a delicious and healthy dish that is perfect for summer gatherings. It is easy to make and can be tailored to your own taste preferences. With so many different variations, you are sure to find a six-bean salad recipe that you will love.
