1/2 5-to-6-pound seedless watermelon, cut into 1-inch cubes
1 pineapple, peeled, cored and cut into 1-inch cubes
2 mangoes, peeled, pitted and cut into 1-inch cubes
Grated zest and juice of 1 lime
Vegetable oil, for brushing
2 teaspoons chili powder
Coarse sea salt

Steps:

  • Soak 18 wooden skewers in water 20 minutes. Thread the watermelon, pineapple and mango cubes on the skewers. Put the skewers in a large zip-top plastic bag, being careful not to puncture the bag; add the lime juice, seal and toss gently to incorporate. Refrigerate at least 30 minutes or until ready to use.
  • Preheat a grill or grill pan to medium high. Remove the skewers from the bag and place on a baking sheet. Brush the fruit with vegetable oil and place the skewers on the grill. Grill, turning once, until marks appear, 6 to 8 minutes. Transfer to a serving platter.
  • Combine the lime zest, chili powder and 1 teaspoon salt in a small bowl. Sprinkle the seasoning over the grilled fruit.

4 (10-inch) skewers
1/2 cup brown sugar
1/4 cup water
1 teaspoon ground cinnamon
1/2 orange, juiced, plus remaining half zested, reserved from Chicken Satay recipe
1 (20-ounce) can pineapple chucks, reserve the juice and 4 pieces for cocktail
2 nectarines, cut into 1-inch chucks
1 mango, peeled, flesh cut into 1-inch chucks
1 (8-ounce) container vanilla yogurt

Steps:

  • If you are using wooden skewers, soak them in water for at least 30 minutes.
  • In a small pot combine the brown sugar with 1/4 cup water, cinnamon and orange zest. Bring to a boil over medium heat. Remove from heat and set aside to cool to room temperature.
  • Preheat the grill or grill pan over low heat.

1/4 cup thinly sliced fresh ginger (don't bother to peel it)
4 unpeeled bananas (not overripe)
1 small pineapple

6 ounces greek plain yogurt, your brand choice. (I use Nostimo brand yogurt)
1 tablespoon of strongly flavoured honey (Tupelo or Buckwheat are incredible! Regular honey can also be used)
1 tablespoon of chopped mint (I use either Pineapple mint or Peppermint)

Steps:

  • Place the 6 ounces of Greek yogurt into a bowl or container deep enough to stir vigorously. Stir to break up the yogurt.
  • Add chopped mint. Mash mint leaves with the back of a spoon, into the yogurt, to release the flavour. Stir well to combine.
  • Add tablespoon of honey. Stir to combine.
