Steps:

  • Melt 2 tablespoons butter in heavy medium skillet over medium heat. Add onion, brown sugar and vinegar; sauté until onion is golden brown, stirring frequently, about 25 minutes. Remove from heat. Cool to room temperature.
  • Preheat oven to 350°F. Sprinkle cheese over half of each tortilla, dividing equally. Sprinkle prosciutto and sautéed onion over cheese. Season with pepper. Fold other half of each tortilla over cheese mixture. Brush tortilla with some of melted butter.

1 1/2 Tbsp Montreal seasoning
4 slice thick bacon
4 oz Gruyere, slice & torn; more if you like

BASTING SAUCE
3/4 c beef broth
1/4 c dry vermouth
1/4 tsp lemon thyme
1/2 Tbsp Montreal seasoning

Steps:

  • 1. Peel and cut about 1/2" of the onion tops. Trim off a small amount of the bottom of onions so they stand upright.
  • 2. With a spoon, scoop out a few of the inner layers of the onion leaving the majority of the outer layers.
  • 3. Brush onions with olive oil.
  • 4. Liberally sprinkle seasoning over each onion.
  • 5. Wrap bacon slices around each onion; secure with a toothpick.
  • 6. Prep smoker to 250 degrees F.
  • 7. Combine basting sauce ingredients in a mixing bowl.
  • 8. Put 2 tablespoons of sauce in the center of each onion.
  • 9. Smoke for 2 hours.
  • 10. Baste every 30 minutes.

4 large eggs

  • For the crepes: Combine the milk, flour, sugar, salt, eggs and 2 tablespoons of the butter in a blender and blend until smooth, about 20 seconds. Let the batter rest at room temperature for at least 15 minutes before using or transfer to a container with a lid and let rest in the refrigerator for up to 1 day.
  • For the lemon creme fraiche: Whisk together the creme fraiche, lemon zest and juice and some salt and pepper in a small bowl. Set aside.
  • For the herbed ricotta and topping: Put the ricotta, chives, dill, parsley, lemon zest and some salt and pepper in a medium bowl and work together with a fork.
  • Heat a 10-inch nonstick skillet over medium heat. Lightly brush with some of the remaining melted butter. Add 3 to 4 tablespoons of the crepe batter and swirl the skillet so the batter completely covers the bottom. Cook until the underside of the crepe is golden brown, 2 to 3 minutes. Loosen the edge of the crepe with a rubber spatula, then with your fingertips, quickly flip. Cook 1 minute more. Slide the crepe out of the skillet and repeat with the remaining batter, coating the skillet with butter as needed. Stack the finished crepes directly on top of each other.
  • Lay 8 crepes on a flat surface. Smear about 1/4 cup herbed ricotta in a wide strip down the center of each. Top with 2 or 3 slices of salmon, then gather the sides of each crepe around the filling, leaving most of the filling exposed. 3/4 cup apple cider vinegar
1/4 cup tomato paste
3/4 cup peanut butter

3 ounces bourbon
1 small red onion, sliced thin
2 cups apple cider vinegar
3 tablespoons sugar

Steps:

  • Preheat the grill. Soak the peanut shells in water for 45 minutes.
  • Season the pork well with salt, pepper, and steak seasoning. Smoke the pork on the grill for 45 minutes.
  • Preheat the oven to 400 degrees F.
  • Transfer the pork to a roasting pan, drain the peanuts and add them to the pan. Roast the pork in the oven until it reaches 135 degrees F on an instant-read thermometer, about 20 to 30 minutes. Remove from the oven to a cutting board.
  • Peanut Butter BBQ Sauce: Combine all the sauce ingredients in a large saucepot and bring it to a simmer over low heat. Let simmer for at least 1 hour. Taste and season with salt and pepper, if needed.
  • Slice the pork and arrange it on a serving platter. Spoon the warm BBQ sauce over the top and serve with the Carrot and Pickled Onion Salad.
  • Put the red onions in a shallow baking pan. In a saucepan, add the vinegar, sugar, and salt and bring to a boil over medium heat. Pour the hot liquid over the onions and cover immediately. Let sit covered for at least 1 hour. Strain the onions and reserve.
  • To assemble the salad: In a medium-sized serving bowl, combine the carrots, parsley, peanuts, orange zest and juice, peanut oil and pickled onions and toss to combine well. Season with salt and pepper, to taste.

5 medium onions, or 4 cups smoked onions
4 cups mayonnaise
2 cups sour cream
1 cup milk
3 tablespoons Worcestershire sauce
2 tablespoons black pepper
1 tablespoon sugar
1 tablespoon salt, plus more for seasoning
1/2 teaspoon liquid smoke

Steps:

  • Soak the hickory chips in water for 30 minutes, and then drain. Place the soaked chips in a stovetop smoker or outdoor smoker over medium-high heat. Peel and quarter the onions and place in a perforated pan. Cover with tin foil, poke a few holes in it, place in the smoker, and smoke for 1 hour. Your onions should be soft and have a nice brown color. Tasting the onions for smoke flavor is the best way to check for doneness, not all smokers are the same. 2 teaspoons lemon zest
2 garlic cloves, grated

2 lbs yukon gold potatoes, unpeeled

  • Preheat oven to 375 degrees F.
  • Combine the olives, lemon zest and garlic in a small bowl. Set aside.
  • Mix the smoked paprika, olive oil, 3/4 teaspoon of the salt and pepper into a paste in a large bowl.
  • Lay the chicken thighs skin-side down. Using a pair of kitchen shears, make a cut down the length of the bone to expose it, then cut the meat away from the bone. Discard the bone. Add the boned chicken thighs to the paste and massage to coat.
  • Thinly slice the potatoes on a mandoline, about 1/4-inch thick. Arrange the potato slices and onion pieces in an even layer on a foil-lined half sheet pan and sprinkle with the remaining 3/4 teaspoon salt.
  • Stuff about 2 tablespoons of the olive mixture under the skin of each chicken thigh. Arrange the chicken thighs, skin-side up, on a cooling rack and set the rack over the potatoes and onion in the half sheet pan. Bake until the skin is crispy and the potatoes are tender, 55 to 60 minutes. If you prefer the potatoes crispy, remove the rack with the chicken and return to the oven for an additional 5 to 10 minutes. Serve immediately.

2 cups yellow cornmeal
4 tablespoons flour
1 1/2 teaspoons baking soda
1 teaspoon salt
1/2 cup white sugar
3 green onions (chopped fine)
4 slices of thick cut bacon
1 1/2 cups milk (skim milk is fine)
2 eggs (beaten)
2 tablespoons bacon grease

Steps:

  • In a large mixing bowl, combine the cornmeal, flour, baking soda, salt and sugar. Sift together until thoroughly mixed.
  • In a 12 inch cast iron skillet, fry up your 4 strips of thick cut bacon. Chop them up into small pieces and put them into separate mixing bowl.
  • Chop the green onions and add them to the mixing bowl with the bacon. Now add in the milk, eggs and 2 tablespoons of the bacon grease.
  • Now pour the wet ingredients into the larger mixing bowl with the dry ingredients and thoroughly mix these together. Set the batter aside.
  • Get your smoker going. You'll want to get this hotter than you usually do. We'll need it up to about 375. Put your cast iron skillet in right away, so it's good and hot when you pour the batter inches I used apple wood for this cornbread, but you can use what ever wood you prefer.
  • Note: Remove the water pan to allow more heat. I also had to open the side door on my Webber Smoky Mountain vertical smoker a couple of times to get it hot enough. It would start dropping back down towards 350, then I would open the door again for about 1 minute to get it moving back up.
  • Once it's up to temperature, pour the batter into the skillet, close it up, and maintain this temperature as best as possible. (If you have an electric smoker, this shouldn't be any problem!).
  • This should take about a half hour to cook. Stick a toothpick into the center of the cornbread. If it comes out clean, it's done. Another indicator of it being done is that the sides should start pulling away from the pan.
  • Take it off and serve it up in the skillet. It will stay nice and warm sitting in the skillet!

1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1/4 teaspoon dry mustard
1 tablespoon chopped fresh thyme leave (or 1 teaspoon dry)
3 large eggs
3 egg whites
1 cup fat-free evaporated milk (not condensed milk)
1/4 lb slice of smoked low fat smoked turkey (cubed)
2/3 cup grated gruyere cheese (about 1-ounce)

Steps:

  • Preheat the oven to 400 degrees F. Spray a 9-inch pie dish with cooking spray.
  • To prepare the crust, put the oats, flour and salt in the bowl of a food processor and pulse 3 times to combine. Add the butter and pulse about 12 times, until you get a pebbly course texture. Add the buttermilk and pulse 3 to 5 times more to combine. Form the mixture into a ball and place it between 2 large pieces of waxed paper. Roll out into a circle about 10 inches in diameter.
  • Remove the top sheet of waxed paper. Transfer the crust, still on the other piece of waxed paper to the pie dish, then remove the waxed paper from the top. Press the crust gently into the dish. Bake for 9 minutes, then let cool.
  • To prepare the filling, heat 2 teaspoons of oil in a large nonstick pan over a medium-low heat. Add the onion and cook, stirring occasionally, until golden brown and caramelized, about 20 minutes. Transfer the onions to a bowl. Add the remaining 2 teaspoons of oil to the pan and heat over a medium-high heat. Add the mushrooms and cook, stirring occasionally, until they have released their water and begin to brown, about 6 minutes. Add the onions back to the pan, stir in the salt, pepper, mustard and thyme.
  • In a medium bowl whisk together the eggs, egg whites and evaporated milk.
  • Sprinkle the cheese into the pie crust. Top with the mushroom-onion mixture, add cubed smoked turkey, and pour the egg mixture on top. Reduce oven temperature to 350 degrees F. Bake for 35 minutes or until knife inserted in the middle comes out clean. Let stand for 5 minutes before cutting into 6 wedges and serving.

1 large red onion, thinly sliced
8 slices Canadian bacon
4 large plain croissants, halved lengthwise or 4 large bagels, split and toasted

  • Preheat oven to 350°F.
  • Melt margarine in a skillet, cook onion over medium-high heat, stirring occasionally, 10 minutes or until onion is golden brown.

6oz pimento stuffed green olives, chopped
2tsp lemon zest
2 cloves garlic, grated
3 T smoked paprika
1 T olive oil
1 1/2 t kosher salt
1/4 t black pepper, freshly ground
8 bone in, skin on chicken thighs
2 lb yukon gold potatoes, unpeeled
1 medium yellow onion, frenched

Steps:

  • 1. Preheat oven to 375 degrees F. 2. Combine the olives, lemon zest and garlic in a small bowl. Set aside. 3. Mix the smoked paprika, olive oil, 3/4 teaspoon of the salt and pepper into a paste in a large bowl. 4. Lay the chicken thighs skin side down. Using a pair of kitchen shears, make a cut down the length of the bone to expose it, then cut the meat away from the bone. Discard the bone. Add the boned chicken thighs to the paste and massage to coat. 5. Thinly slice the potatoes on a mandoline, about 1/4 inch thick. Arrange the potato slices and onion pieces in an even layer on a foil lined half sheet pan and sprinkle with the remaining 3/4 teaspoon salt. 6. Stuff about 2 tablespoons of the olive mixture under the skin of each chicken thigh. Arrange the chicken thighs, skin side up, on a cooling rack and set the rack over the potatoes and onion in the half sheet pan. Bake until the skin is crispy and the potatoes are tender, 55 to 60 minutes. If you prefer the potatoes crispy, remove the rack with the chicken and return to the oven for an additional 5 to 10 minutes. Serve immediately.

1/3 cup chopped fresh cilantro
2 ounces pea shoots or pea sprouts or 1 small bunch trimmed watercress
1 teaspoon hot pepper sauce

Steps:

  • Preheat oven to 300°F. Heat 3 tablespoons oil in large nonstick skillet over high heat. Add onions and sauté until almost soft, about 5 minutes. Add barbecue sauce and 2 tablespoons water. Stir until onions are evenly coated, about 2 minutes.
  • Place 4 tortillas on work surface. Sprinkle 1/4 of cheese, then 1/4 of cilantro and 1/4 of onions on each tortilla. Top each with second tortilla and press to adhere.

Fill half the celery stalk with salmon-cream cheese mix and the other half with remaining cheese mix.

10 flour tortillas
1 (12 ounce) package alouette garlic & herb spreadable cheese
1 1/2 lbs smoked turkey, sliced
2 large onions, sliced
1 tablespoon sugar
2 tablespoons balsamic vinegar
spring mixed salad green

Steps:

  • Sauté onions in a little oil. When soft and just turning brown add sugar.
  • When caramelized add balsamic vinegar. Let cool.
  • Spread tortillas with alouette cheese, layer with turkey, onions and then spring lettuce mix.
  • Roll up and I wrap them with either foil or Saran Wrap and refrigerate up to 4 days. Enjoy!
