SMOKED SALMON FRENCH TOAST SANDWICH

This quick recipe is a great way to use up old bread. Serve with wine and a nice side salad for a bistro-style meal. For a vegetarian option, substitute slices of Granny Smith apples and old Cheddar cheese for the smoked salmon and cream cheese. You can substitute Italian seasoning for the herbes de Provence, if desired. You can use any artisinal-style bread in place of the French bread.

Yield Serves 4

Number Of Ingredients 9

1/2 pound soft mild goat cheese (such as Bucheron or Montrachet), room temperature
10 tablespoons minced fresh arugula or watercress
5 tablespoons olive oil
6 teaspoons minced fresh chives
1 pound smoked salmon slices
2 tablespoons fresh lemon juice
12 1/2-inch-thick egg bread slices
Fresh arugula or watercress leaves

  • If you don't have a griddle, you can cook the French toast in a large skillet over medium heat.
  • Be careful not to overcook the French toast, as it will become dry and tough.
  • For a richer flavor, use a mixture of butter and olive oil to cook the French toast.
