GINGER NOODLE SALAD WITH SNOW PEAS

Ginger Noodle Salad with Snow Peas image

Categories     Pasta     Salad

Number Of Ingredients 9

2 tablespoons sesame seeds
1 piece fresh ginger, 2 inch
6 pieces green onions
1/4 cup soy sauce
2 tablespoons lemon juice
2 tablespoons sesame oil
2 tablespoons vegetable oil
1 pound snow peas
8 ounces whole wheat angel hair or spaghetti

Steps:

  • Place sesame seeds in a medium skillet over medium; toast, shaking pan occasionally, 3-5 minutes. Transfer to small bowl.
  • Grate fresh ginger. Chop green onions, separate white and green parts.
  • In a large bowl, combine ginger, whites of onions, soy sauce, lemon juice, sesame oil, vegetable oil and salt and pepper to taste.
  • Trim snow peas and stack a few at a time; slice lengthwise into 3-4 thin strips.
  • Bring a large pot of water to a boil. Add 8 oz pasta, broken in half. Cook, stirring occasionally until tender.
  • Stir in snow peas.
  • Drain immediately, shaking off as much water as possible. Add to bowl; toss gently to coat.
  • Garnish with sesame seeds and green part of onions. Serve warm or let sit up to 1 hour and serve at room temperature.

Tips:

  • Use fresh ingredients: The fresher your ingredients, the better your snow salad will taste. This is especially important for the snow, which should be freshly fallen and clean.
  • Choose the right kind of snow: Not all snow is created equal. For snow salad, you want to use light, fluffy snow that is easy to pack. Avoid snow that is too wet or icy.
  • Pack the snow tightly: When you're packing the snow into your mold, be sure to pack it tightly so that it holds together well. This will help to prevent the salad from falling apart when you unmold it.
  • Chill the snow salad before serving: Once you've made your snow salad, chill it in the refrigerator for at least 30 minutes before serving. This will help to firm it up and make it easier to slice.
  • Garnish with your favorite toppings: Before serving, garnish your snow salad with your favorite toppings. Some popular options include fruits, nuts, and whipped cream.

Conclusion:

Snow salad is a delicious and refreshing treat that is perfect for any occasion. It's easy to make and can be customized to your own liking. So next time you're looking for a fun and unique dessert, give snow salad a try!
