3 slices bacon, chopped
1 tablespoon extra-virgin olive oil, 1 turn of the pan
1 shallot, chopped
1 1/2 pounds Brussels sprouts, trimmed, small sprouts left whole, larger sprouts halved
Salt and pepper, to your taste
1 cup chicken broth

Steps:

  • Brown bacon in a medium skillet over medium high heat. Remove bacon to a paper towel lined plate. Add extra-virgin olive oil to the pan, 1 turn. Add shallots to the pan and saute 1 to 2 minutes. Add Brussels sprouts and coat in oil. Season with salt and pepper. Cook Brussels sprouts 2 to 3 minutes to begin to soften, then add broth. Bring broth to a bubble, cover and reduce heat to medium low. Cook 10 minutes, until tender. Transfer sprouts to a serving dish with a slotted spoon and top with cooked bacon bits.

3 tablespoons white wine vinegar
3 tablespoons honey
1 cup chicken stock
1 fresh bay leaf
1/2 red onion, chopped
1/2 red bell pepper, chopped
2 teaspoons mustard seed
1/4 teaspoon turmeric
2 tubs Brussels sprouts (about 2 pounds)
2 tablespoons celery salt
Black pepper

Steps:

  • In a skillet, combine vinegar, honey and stock with a whisk. Stir in bay leaf, onion, pepper, mustard seed and turmeric, stir and bring to a boil. Trim the Brussels sprouts and halve them. Add to stock mixture and season with celery salt and pepper. Cover and reduce heat and simmer 10 minutes, uncover and cook 5 minutes more.

4 slices crusty baguette, sliced
salt
12 -14 large Brussels sprouts
1 large starchy potato
1 lb spaghetti
6 tablespoons butter
2 large cloves garlic, minced
12 leaves fresh sage, sliced
pepper
freshly grated nutmeg, to taste
1 cup grated parmesan cheese

Steps:

  • Preheat oven to 325°F.
  • Toast bread in hot oven to golden brown.
  • Pulse the bread in food processor to make fresh, large breadcrumbs.
  • Using the tip of a very sharp paring knife.
  • remove the core of the Brussels sprouts and separate leaves.
  • You should yield 3 cups loosely packed leaves.
  • Bring a large pot of water to a boil.
  • Salt water.
  • Peel the potato and cut into thirds horizontally,.
  • then slice the thirds of potato across lengthwise,.
  • into about 1/4-inch slices.
  • Boil potatoes 5 minutes, add Brussels sprouts leaves after 2 minutes.
  • Remove potatoes and cabbage from water with a spider.

3 slices chopped bacon
1 tablespoon olive oil
2 shallots, minced
1 1/2 lbs small Brussels sprouts, trimmed but left whole
salt and pepper
1 cup chicken broth

  • Brown bacon.
  • When crisp, remove bacon from pan and drain fat.
  • Add the olive oil and shallots and saute 1-2 minutes.

Be careful not to over cook so that the sprouts are still bright green and the shallots are just opaque. I thought that the thinly sliced Italian Ham Rachael Ray added to her Sprouts in another recipe would have tasted good in this - or crumbled cooked bacon.

2 tablespoons extra virgin olive oil
6 shallots, thinly sliced
salt and pepper

1/2 lb pancetta or 1/2 lb bacon, chopped
4 garlic cloves, chopped
1 small red chili peppers, seeded and finely chopped or 1 teaspoon crushed red pepper flakes
1 pint Brussels sprout, cores trimmed and thinly sliced about 1/8-inch thick
black pepper
1 few grates nutmeg
2 tablespoons fresh thyme, chopped
1 teaspoon lemon zest
1/2 cup chicken stock
1 tablespoon lemon juice
1 tablespoon butter
salt
1 lb spaghetti
1 cup grated pecorino romano cheese

Steps:

  • Bring a large pot of water to a boil for the pasta.
  • Heat a deep skillet over medium-high heat with olive oil, three turns of the pan. Add the bacon and render for 2-3 minutes. Add the garlic and chili pepper and stir for 1 minute. Add the shredded Brussels sprouts and season with black pepper. Toss to lightly brown; season with nutmeg, thyme and lemon zest. 1 1/2 tablespoons butter
2 medium onions, chopped
2 pints Brussels sprouts, thinly sliced
1 teaspoon ground allspice
1 tablespoon sage, thinly sliced
salt & freshly ground black pepper
2 cups chicken stock or 2 cups vegetable stock
1 small radicchio, chopped

  • Heat a large sauté pan over medium-high heat with the EVOO and butter. Add the onions and cook until caramelized, 5-6 minutes.
