GRILLED CARROTS WITH HERBY COCONUT YOGURT AND SPICY BEET VINAIGRETTE

Grilled Carrots With Herby Coconut Yogurt and Spicy Beet Vinaigrette image

It's a shame you don't often spot people grilling carrots, because they also grill beautifully, developing a char that balances out their sweetness.

Provided by Gregory Gourdet

Categories     HarperCollins     Vegetarian     Spring     Summer     Dairy     Tree Nut Free     Peanut Free     Soy Free     Wheat/Gluten-Free     Gluten-Free and Fresh     Carrot     Beet     Vinegar     Salad     Side     Grill/Barbecue     Dinner

Yield Serves 4 to 6

Number Of Ingredients 17

For the Beet Vinaigrette:
1 large beet (about 4 inches in diameter, any color), peeled and cut into 1/4-inch cubes
½ teaspoon kosher salt
¼ cup plus 2 tablespoons red wine vinegar
2 medium garlic cloves, thinly sliced
2 fresh Thai chiles, thinly sliced
¼ cup plus 2 tablespoons extra-virgin olive oil
For the Herby Coconut Yogurt:
Handful mixed herbs, such as basil, mint, dill, and cilantro
1 cup plain coconut yogurt
1 scallion, trimmed and thinly sliced
½ teaspoon kosher salt
1 juicy lime
For the carrots:
2 pounds trimmed medium carrots, halved lengthwise if thicker than 1 inch
1 tablespoon avocado oil
½ teaspoon kosher salt

Steps:

  • Make the Beet Vinaigrette:
  • Put the beet in a small mixing bowl, season with the salt, stir, and set aside for 10 minutes to soften and season the beet. Combine the vinegar, garlic, and chile in a small saucepan, bring all to a boil over high heat, then lower heat to gently simmer for 1 minute, just to cook off the garlic's raw flavor. Pour the hot mixture over the beets, stir, and let sit at room temperature for 1 hour. Stir in the olive oil.
  • Make the Herby Coconut Yogurt:
  • Roughly chop the herbs. In a small bowl, combine the yogurt, most of the herbs, the scallion, and the salt. Use a Microplane to grate the lime zest into the bowl, then halve the lime and squeeze in the juice. Stir well.
  • Grill the carrots and make the dish:
  • Fire up a grill to cook with medium-high heat. On a plate, rub the carrots with the avocado oil to just barely coat them (excess oil will lead to flare-ups and unpleasant flavor). Season the carrots with the salt, toss, and grill, turning them occasionally and moving them to a cooler part of the grill if they get dark before they're tender, until lightly charred and fully tender, 6 to 8 minutes. Let them cool for a couple of minutes.
  • Spread the yogurt on a platter and top with the carrots. Spoon on the pickle-y beets first, then drizzle on about 2 tablespoons of the vinaigrette. Sprinkle with the remaining herbs and serve.

SAUTéED SPICY CARROTS WITH BLACK QUINOA

Sautéed Spicy Carrots With Black Quinoa image

This is inspired by a classic Moroccan spiced cooked carrot salad (Ommok Houriya is one variation of the transliteration). Carrots and cumin have long been a favorite combination of mine; added to this mix is fresh green chile and crushed coriander. I finish this off with a sprinkling of black quinoa and fresh mint (cilantro would also be good). If on the off-chance you can find a selection of multicolored carrots - yellow, purple, and orange - the dish will be all the more beautiful, but it is pretty enough with regular orange carrots. Cook them long enough to bring out the sweetness, which means longer than crisp-tender. They should be soft, but not mushy.

Provided by Martha Rose Shulman

Categories     dinner, vegetables, side dish

Time 15m

Yield Serves 6 to 8

Number Of Ingredients 11

2 tablespoons extra virgin olive oil
2 garlic cloves, minced
1 to 2 serrano or jalapeño chiles, minced
2 teaspoons coriander seeds, lightly toasted and coarsely ground or crushed
2 teaspoons cumin seeds, lightly toasted and coarsely ground or crushed
2 pounds carrots, peeled and sliced on the diagonal, about 1/4 inch thick
1 1/2 teaspoons sugar
Salt
1 tablespoon unsalted butter (optional)
1/4 to 1/3 cup cooked black quinoa
2 tablespoons chopped fresh mint or cilantro

Steps:

  • Heat olive oil in a large, heavy skillet over medium-high heat and add garlic and chile. Stir for about 10 seconds and add ground coriander and cumin. Stir for about 10 seconds, until mixture is very fragrant, and add carrots, sugar and salt to taste. Sauté, stirring often or tossing in the pan, for 5 minutes and turn heat down to medium. Continue to cook, stirring often or tossing in the pan, for another 10 minutes, until carrots are tender and lightly colored.
  • Add butter, quinoa and mint or cilantro and stir or toss in the pan for another minute or two, until quinoa is warmed through and butter has melted. Taste and adjust seasonings. Serve hot or warm.

Tips:

  • Choose the right carrots: Look for fresh, firm carrots with a deep orange color. Avoid carrots that are limp or have blemishes.
  • Cut the carrots evenly: This will help them cook evenly. If you are using baby carrots, you can leave them whole.
  • Use a variety of spices: This will give your carrots a more complex flavor. Some good spices to use include cumin, coriander, paprika, chili powder, and cayenne pepper.
  • Roast the carrots at a high temperature: This will help them caramelize and develop a delicious flavor. If you are using baby carrots, you can roast them at a lower temperature for a shorter amount of time.
  • Serve the carrots immediately: Spicy carrots are best served fresh out of the oven. You can garnish them with fresh herbs, such as cilantro or parsley.

Conclusion:

Spicy carrots are a delicious and healthy side dish that can be enjoyed by people of all ages. They are easy to make and can be customized to your liking. Whether you like your carrots mild or spicy, there is a recipe out there for you. So next time you are looking for a healthy and flavorful side dish, give spicy carrots a try.
