3 lemongrass stalks, bottom two-thirds of tender inner bulbs only, thinly sliced
4 cloves garlic, chopped
1 (4 inch) piece fresh ginger root, chopped
4 cups chicken broth
1 tablespoon vegetable oil
2 ½ pounds skinless, boneless chicken thighs, cut into chunks
12 ounces fresh white mushrooms, quartered
2 teaspoons red curry paste
3 tablespoons fish sauce
1 lime, juiced
2 (14 ounce) cans coconut milk
1 red onion, sliced
½ bunch cilantro, roughly chopped
1 lime, cut into wedges, for serving
1 fresh jalapeno pepper, sliced into rings

Steps:

  • Stir lemon grass, garlic, and ginger together in a large stock pot over medium-high heat. Stir in chicken broth and bring to a boil. Reduce heat to low and simmer for 30 minutes.
  • Strain chicken broth and set aside. Discard lemon grass, garlic, and ginger.
  • Heat vegetable oil in a large soup pot over medium heat; Stir in chicken; cook and stir for 5 minutes.
  • Stir in mushrooms and cook for 5 more minutes.
  • Stir in red curry paste, fish sauce, and lime juice until combined. Stir in chicken broth and coconut milk; return to a simmer and cook on low for 15 to 20 minutes.
  • Skim off any excess oil and fat that rises to the top and discard.
  • Stir red onion into the chicken mixture; cook and stir until onion softens, about 5 minutes.

2 tablespoons curry powder

2 13.5- to 14-ounce cans unsweetened coconut milk,* divided
5 cups low-salt chicken broth
2 1/2 tablespoons fish sauce (such as nam pla or nuoc nam)*
2 teaspoons sugar
3 cups snow peas, trimmed
2 cups 1/2-inch cubes peeled red-skinned sweet potato (yam; from about 1 large)
1 pound dried rice vermicelli noodles or rice stick noodles*

Bring water in same pot back to boil. Add sweet potato and cook until tender, about 7 minutes. Using strainer, remove sweet potato from pot and rinse under cold water to cool. Place in small bowl. Bring water in same pot back to boil and cook noodles until just tender but still firm to bite, about 6 minutes. Drain; rinse under cold water to cool. Transfer to microwave-safe bowl. 1 whole chicken (about 4 pounds), cut into 8 parts
1 onion, skin on, cut into quarters
2 carrots, scrubbed and cut into thirds
6 cloves garlic, skins on
2 jalapeños, 1 halved lengthwise, 1 thinly sliced
10 cilantro sprigs, plus 1/3 cup chopped leaves and stems
Kosher salt
Vegetable oil, for frying
4 corn tortillas, cut into 1/4-inch strips
2 medium tomatoes, diced
2 tablespoons fresh lime juice
2 avocados, thinly sliced, for serving
2 radishes, thinly sliced, for serving
1/3 cup crumbled cotija, for serving

Steps:

  • Fill a large pot with 14 cups water; add chicken, onion, carrots, garlic, halved jalapeño, cilantro sprigs, and 1 tablespoon kosher salt and bring to a boil. Skim foam, reduce heat, and gently simmer until chicken is cooked through, 20 to 25 minutes. Transfer all chicken pieces except backbone to a cutting board; continue simmering broth while you remove and discard skin and remove meat from bones. The recipe calls for pulled chicken, but my Dad used pre-cooked chicken strips. 12 ounces hot sauce
1/2 cup all-purpose flour
14 ounces shredded white cheddar cheese
16 ounces heavy cream
32 ounces chicken stock

24 ounces crumbled blue cheese
2 lbs pulled chicken

Steps:

  • In a stockpot, melt the butter and add the celery, carrots, and onions. Cook until slightly tender.
  • Add the flour and coat the vegetables and continue to cook for approximately 2 minutes. Then add the chicken stock and continue cooking. Stir until the liquid begins to thicken.
  • Add the chicken and heavy cream and stir to combine the cream. Increase heat to bring soup almost to a boil. 2 chicken breasts, cut into 1-inch pieces
1 small onion, chopped
2 chipotle peppers in adobo sauce, seeded and diced
2 cloves garlic, minced

2 (16 ounce) cans hominy
1 (15 ounce) can diced tomatoes
1 (15 ounce) can black beans, rinsed and drained
1 ½ cups water

1 pinch cayenne pepper

I got this recipe about three years ago from the back of a can of tomatoes (Delmonte, I think), and it's been a hit with my husband -- who isn't a soup fan generally. It's a very easy but good comforting winter soup that also freezes well. Also easy to double recipe.

3 cups chicken broth or 3 cups water
1 1/2 lbs chicken, seasoned (I prefer breasts)
2 (14 1/2 ounce) cans diced tomatoes
1 package red beans and rice mix
shredded cheese

Steps:

  • Cook chicken with either Cajun or Mexican seasonings-- sometimes I bake the chicken, and sometimes I saute it.
  • (I've also cut up a store-bought rotisserie chicken for this).
  • Dice cooked chicken.
  • Prepare red beans& rice (I like Zatarrain's) per package directions.
  • (it has to cook about 30 min) Meanwhile, combine chicken broth& diced tomatoes; bring to a boil.
  • When boiling, add diced chicken.
  • Reduce heat and cook about 10 minutes.
  • Add prepared beans and rice; heat through.
  • Spoon into bowls and top with cheese.

1/2 to taste olive oil
1 1/2 medium sweet onions
1 1/4 medium green peppers
5 hearts celery (I estimated 8 whole stalks, but only had hearts)
4 -5 medium carrots (6 large would be enough)
4 medium sized potatoes (maybe just 4-5 larger Idaho baking potatoes?)
5 -6 garlic cloves
2 quarts chicken stock (2 from boxed broth, 2 from concentrate)
2 1/2 boneless skinless chicken breasts
2 (14 ounce) cans tomatoes, 28 oz can and (I used "Generic" Safeway Diced Petite, (1, 1)
1/2 cup of chopped parsley
1/2 to taste white pepper (2 tablespoons total?)
1/2 to taste black pepper (1.5 or 2 tablespoons?)
1/2 to taste salt (1.5 tablespoon?, and then salted to taste at end)
1 lb ditalini, as needed when serving (or stubby pasta of choice)

Steps:

  • In a large stockpot:. heat olive oil under fairly low to medium heat. "Sweat" onion, celery, green pepper and some salt (to draw off moisture) for perhaps 30 minutes -- this is lower than browning, and makes the veggies somewhat translucent. Cover and mixed every few minutes to prevent browning. Add carrots, garlic, some white pepper and some black pepper, and continue to heat under "sweat" conditions while mixing now and then. Add chicken stock, chicken breasts, tomatoes and potatoes -- and of course some more white pepper and black pepper. Cover and simmer on low heat for 1.5 to 2 hours (or use crock pot?). Remove chicken and let cool and stand to shred. Add chopped parsley and return the shredded chicken to the soup. Salt to taste at this point, and add more white and black pepper if your tongue is not twitching a bit when you sample. Simmer while cooking ditalini (or other stubby pasta). Serve soup over cooked pasta to taste. Note: Like many soups, this may be better made the day before and then served when needed. Also can freeze some for ready-made meals.
