SPICY SUN-DRIED TOMATO SAUCE
Medium-spicy flavor, tangy tomato taste (only for real sun-dried tomato lovers) and a bright, sweetish accent from the touch of orange and cinnamon. Use the best sun-dried tomatoes for this recipe. Try it on pasta (I suggest about 1/2 cup per 4 ounces pasta) with parmesan cheese or crumbled feta or toss with beans. It would also make a terrific pizza sauce. This recipe is easily halved and the sauce can be frozen. From Angelica's Home Kitchen in NYC, voted 2006 best vegetarian restaurant.

- Soak the tomatoes before using: Soaking the tomatoes in hot water for 15 minutes will help to soften them and make them more flavorful.
- Use a good quality olive oil: Olive oil is an essential ingredient in Italian cooking, and it really makes a difference in the flavor of your sauce. Look for an extra virgin olive oil that is fruity and flavorful.
- Add some heat: If you like your sauce with a little bit of a kick, add some red pepper flakes or chili powder. You can also add some chopped fresh chili peppers.
- Simmer the sauce for at least 30 minutes: This will help to develop the flavors and make the sauce nice and thick.
- Serve over your favorite pasta: This sauce is perfect for serving over spaghetti, penne, or any other type of pasta. You can also use it as a dipping sauce for bread or vegetables.
